Day one of bootcamp

Sunday, January 03, 2010

Well it's day one of bootcamp. Interesting to say the least. I woke up to discover that I have been caught by a cold. emoticon But I did not let that stop me from diving into my workout. I must say that the workout was more challenging than expected. I hope to master it before the month's end.

Below are my "before" pictures. But I really need to refer to them as my January 2010 start pics since I am in the middle of this journey. But here we go and I can't wait to see what the after pics will look like.

I did the video today and was suprised at how difficult it was. I do step aerobics for most of my cardio and this was hard! I feel it!

I mentioned yesterday that I would make a commitment to try all the suggested recipes on my meal planner.

So yesterday, I made the applesauce muffins.....yum! emoticon

I also made the lentil burger. Well, I did not care for the consistency. I did enjoy the flavor. Plus the recipe made way more than I needed. So it's in the fridge and I am going to try to use it as a filling for a stuffed pepper. I have a few other ideas to play with. emoticon

But my big YUM for today was the chicken marsala. It was so tasty and it did not take long at all.

I often prepare two dinners per night since my family does not share my eating style. But tonight peaked their interest. While they were eating their ham fettucine, I was enjoying my chicken marsala. I found them all taking a sample and surprised to find they enjoyed it. "How could it be so good my son said if you got it from that healthy web site you are always on?" I just smiled.

So I am thankful I decided to put an effort into trying more of the sparkrecipes and even more hopeful that my family will join in.

It does take a lot of experimentation. I tend to find healthy recipes and "tweak" them - a lot of times I combine things or play with the seasonings. For me, adding garlic to just about anything instantly makes it better! I never was much of a cook before (I knew how, just didn't like to do it) but over the last year I've had a lot of fun playing around in the kitchen and experimenting. Luckily, hubby will eat just about anything!

Well, most of the time, I must admit, I make my own recipes rather than those that pop up on my meal planner. I decided that this year I will try to eat all the suggested meals on the planner. I am a fussy eater and haven't been very adventureous. So today, I am cooking my spark recipes for this week. I am a little worried about the lentil burger....sounds gross to me but I am throwing caution to the wind and going for it. I mean, it is listed on my menu so surely it must be good.

So Sparkrecipes, here I come.

Posted a blog earlier outlining my plan. I posted my blog and then headed to the post office. I was so happy to find my Spark book in my mail box. So I am starting the New Year armed with all my tools. Diving into the book in a few minutes.

Happy New Year all.

That's Terrific! I got mine in the mail yesterday too! I think it is going to be a lot of fun to read. What I can't figure out is what I am doing wrong. I have tried to E-mail Sparks anad tell them I bought the book from Amazon, over a month ago, but for some reason they aren't acknowledging it. So I haven't had the book on my Sparks page saying I bought it, or the 1000 points for getting it, I kept the receipt, and the note from Amazon saying they mailed it to me. I will enjoy it, but I would love to have the extra points to give goodies, to my Sparks Friends, who are so much support. I hope you enjoy reading your book, especially on the cold winter days when we are all snowed in. Your Friend, Amy emoticon
