I Heart Spaghetti Squash

Yup, you read correctly. I am devoting an entire (albeit short) blog entry to my newly discovered favorite food - spaghetti squash.

My Crossfit group is doing a 1-month Paleo challenge and everyone has raved about spaghetti squash. After preparing it properly for the first time this weekend, I now know why.

Have you tried cauliflower "mashed potatoes?" Well, spaghetti squash with marinara sauce is a far better substitute than cauliflower is for mashed potatoes. Hands down.

And, it has 21 calories per half cup, as opposed to 100+ calories per half cup of pasta. Score!

If you've stumbled upon my blog and want to know how to make this delicious side dish for yourself, here's how:

Cut squash lengthwise.
Remove seeds.
Place cut side down in a baking pan with 1" water.
Bake at 350 for 40 minutes.
(I also am told that you can microwave them for 15 minutes.)
Scrape/scoop out the squash. It will look like spaghetti strands this way.

Add marinara sauce or other toppings that you would use with pasta.

End of the Road

I said I would take my time reaching my goals, but this is now getting ridiculous. I started my weightloss journey over the holidays in 2004. I've had a few good years where I have lost a lot of weight, and a few bad years with huge life changes when I just maintained, or gained a few pounds.

This is it - the end of the road. I will reach my ultimate goal by spring of 2012.

There are no more excuses, because I have had:
-A year to adjust to life as a full-time Marketer and part-time MBA student.
-Several months of being in a relationship to now know how to balance my diet and "me" time with "us" time. (I now cook dinners instead of eating out and bringing food in.)
-Half a year to allow my body to adjust to Crossfit and the fuel my body needs to work out at that level.

I've got the fitness part under control. Now, it's time to focus on the eating part.

Yesterday, my Crossfit gym started a Paleo challenge. The person who loses the largest percentage of body fat wins a free month - which is a fairly large chunk of change.

No woman has won such a challenge in recent history. My goal is to become the first.

I am holding myself accountable by posting a few blogs each week.

Hopefully they won't be dull and may even inspire a few people to get out of their ruts or break through plateaus.

    Go ahead and GET AFTER IT!!! Let the CrossFit Team know how you're doing and we'll do what we can to keep you focused.

    Sounds like you have a good plan. Persistance is the key. I too have been on here too long without reaching my goal. 2012 is my "end of the road" also.

Thank you norovirus!

You made me cancel my Super Bowl party and miss watching most of the game that sent my beloved Steelers into the record books, but itís okay because you also helped me break through my plateau. Good bye 180s and hello 170s!

I realize being sick isnít exactly the healthiest way to lose weight, but Iíll take the little 4 pound boost it gave me.

I have achieved goal #1 for 2009 (under 180 by 2/14) and am well on my way to achieving goal#2 (175 by 3/2).

Hereís to reaching all of my goals in 2009!

Stuck in a rut!

I have been stuck in the biggest rut the past few weeks. I haven't really wanted to work out and have not been sticking to my daily caloric range.

I'm hoping to get my motivation back this week! I'm pretty sure part of the problem has been that I was out of my ADD medicine. Aside from keeping me focused at work, the medicine keeps me on track and kills my constant food cravings and the urge to eat when I'm bored.

So, it's time to crack down and get to that 175 mark!!

So it turns out I didn't do as much damage as I thought I had. In fact, I did not do any damage. Wohoo!!! Apparently I didn't eat as badly as I thought I did. And, I must have walked more than I thought.

Now, I just need to get back on track to lose 2.6 pounds by V-Day!
