Boy Those Hills

Wow! Going from the flat Midwestern states my entire life to the very mountainous/hilly terrain of VA really does tire a person out. I just finished my second run outside at our new house and am thrilled to finally have gotten myself out there. It's been rainy the last two days and I don't have a running raincoat just yet but as soon as I do, then nothing will stop me. So on to yesterday's report...

Bfst: bagel with vegan cream cheese & coffee
Snack: some candy apple candy corn
Lunch: Leftover Chef Meg's Squash and Tofu Stew with homemade bread
Dinner: Jpns rice, brussel sprouts drizzled with coconut balsamic vinegar, a few bites of roasted potato, 1/2 tofurky sausage and some swiss chard.
Snack: 1/4 newcastle beer with hubby & popcorn

Nothing really that exciting today because I had to organize the husband's home office and clean the living room from all the moving dirt and grime. I was really tired out though from raking leaves the day before for 2 hours. I think I got enough calorie burning today considering I was running around until around 9pm.

Emotionally I'm in high spirits right now. It's nice to be in a house that has plenty of windows and I can see the sun just about everyday. That's one nice thing about VA is the sun shines just about everyday. Additionally, the temperatures are higher than normal compared to Ohio so it's really an uplifting lifestyle for now.

    It may be hilly but it looks beautiful!!
Hmmm...the only candy corn I like is the Brach's regular or Indian...the other flavors..yuck.
Sorry, I haven't used any running gloves but I'd like to know what you end up with because I'll need some for Vegas in December.

Whew, At Home

Finally, I'd like to announce we have arrived at our VA house and are getting settled in, kinda. This last week seriously flew past and I have been so busy with unpacking and cleaning the new house. It's a bit smaller than we had anticipated but we are making it work. It has lots of sunshine all day long and is quiet all night long. (minus the raccoons that seem to have misplaced their toys with our locked trash bin) It's all going to be a learning experience going from the city to the country again. Thankfully we are in a nice small house and we can get to know the area a bit better before we purchase a house next year (if my husband likes his new job). It's a transition house.

emoticon Food has been a difficult thing for the husband and me. We haven't had a minute free to go to the grocery store and really purchase a full week's worth of groceries. Plus the nearest grocery store is about 20-27 minutes away from our gated community so we are hoping this weekend we can get over to the stores and farmers market. Thankfully I did pack lots of healthier options to dine on when we got here that were dried. So, we haven't starved but we probably haven't eaten the right amount of calories. This week will be different as I'm planning our menu list now according to Sparkpeople recipes.

emoticon We haven't really been able to exercise really either but there has been plenty of lifting and stair climbing. I have gone up our new stairs a million times this week that I'm sure I'm wearing them down already. Additionally lifting a million boxes of books from one room to another hasn't been a piece of pie. We don't have a gym membership just yet but we are trying to decide if we can get away with it for the next few months before getting one or if we are just going to go ahead and get one. We haven't gotten one yet because we have been so busy and secondly because the only gym here doesn't prorate so we would be paying an entire year and only getting a few months out of it. We have been taking at least one walk a day though - hooray for the furry baby!

emoticon My spirits have been a bit low this week due to the house not being the quality we were expecting and of course walking into a less than clean house is not the best for a smile. But, I'm getting it sanitized and trying to get a funky musty smell out from wherever it is coming from and working from there. Now I'm feeling better that it's the weekend and the husband can finally assist me in unpacking and organizing. The weekend should boost both of our minds and spirits.

So for now I'm going to complete the recipe list and then hopefully welcome the husband home from a long week at work. Hope you all have a wonderful weekend! I'll see you on Monday!

    Bummer about the house issues. I'm glad it can be temporary. Country living does have its advantages, though. What's the weather like there? Are there good places to run? Don't blame you for not wanting to join the gym, jeez, is it really that hard t prorate?! Have a successful and productive weekend!

    Glad you are moved in.
I think moving boxes and climbing the stairs is giving you a good workout.
That really sucks that the gym doesn't prorate...that's crazy!!

Okay, so I have to admit I'm getting a bit spoiled being a corporate wife at the moment. Usually I don't talk about it much but I am a housewife and I do a bit of work on the side to keep my sanity. But, I love being here in a hotel where there is a lot of people going in and out. Plus, I love having a gym and pool in the same building.

Today's massively exciting events:
Morning I got up early thanks to my husband having to still drive an hour to work seeing that our hotel is a distance from his office. Guess that's what we get for living in the outskirts of a bigger city. Usually I love mornings but the people above our room for some reason had a vacuum and decided that 10:45P.M. was a good time for cleaning. (Which included moving furniture in the entire room and then banging things around...) Got him off to work in record time and then I was free for the day.

Breakfast: two bites of waffle, two slices of toast with a little vegan butter and blueberry spread. Nothing exciting but it did the job. Oh and the necessary coffee too.

Snack: a few bites of bagel before workout.

Gym Time: 3 miles in 35 minutes. Felt great to sweat! When I finished an older employee was walking down the hallway and asked if I was tired. And I said a bit but nothing the pool couldn't cure. He laughed and said I should be very tired. Guess he was watching through the windows? Ah well, he was a cute old man... ^_^ I walked next door to pool and did a few laps in lukewarm water.... Then i gave up and jumped into the spa for 30 minutes. (That's working out right?)

Lunch: Leftover Aztec Salad, mixed organic greens, two small tortillas, and *cough* two cookies...

Sunbathing with the furry baby outside while reading. Then I worked a little on the laptop.

Snack: Chinese Vegetarian Mushroom Strips- hot! Just a little.

Dinner: Vegan sausage, zucchini and... haven't decided yet... Hoping to cook this outside.

That's a nice kitchen. We stayed at an Extended Stay hotel last December when we were in southern California for a few days...it had a similar kitchen.

1st Day Back

Hello Everyone, Happy Monday! Today was my husband's first day at his new job! Hooray! It's a large change for him going from government work at NASA to the private sector. For me it was the first day being a housewife/freelancer from our hotel room. We have three weeks in this hotel room but I'm not complaining because it is pleasant. The only thing I fear is that I might get too spoiled and not want to leave. Everything went really good today and I was surprised that I got a lot done even though I didn't have too much to do. We only have one car right now, so in this transitional change, I am stuck at the hotel all day long. But, don't fear there is a gym, pool, spa, large grassy area outside, television and even wi-fi. So I'm all setup for the next few weeks. We'll see what I'm feeling after a week or two. The kitchen is a help though so we can eat healthy and not eat out for dinner every day; that would be so tough.

We got up early and went downstairs to breakfast - continental. I have to say that I was hungry and nervous all at the same time and the food got the best of me. I ate vegan options (I checked last time we were here) but not the healthiest.

Breakfast: Coffee, 1/2 waffle, 1 medium banana muffin, and some OJ.
Snack: Mac apple (so little!) and some tea
Lunch: (again bad) Thai summer roll (contains raw lettuce, carrots, a little rice noodle) with a little sweet thai sauce and a donut. (gasp!)
Snack: banana and green tea
Dinner: To be determined still but I did make an raw Aztec Salad to either go in burritos or on top of a mixed bed of organic salad.
Snack: Probably more tea and possibly popcorn if we are wanting more.

Exercise: 3 mile run on treadmill, numerous times up and down 3 flights of stairs to take furry baby outside, carrying laundry to and from laundry facility in our hotel, and maybe some swimming tonight (depending on how tired the hubby is).

Enjoyment: Sitting in the sunshine reading for just less than two hours! Can't believe I have more time now that I don't have to clean the house. (Plus the hubby is on 9 hour days now instead of 8)

This last weekend we toured the gorgeous downtown of Fredericksburg, VA. We went to an Episcopal church on sunday but then walked around a bit checking out the stores again. It was really nice. Then in the afternoon we went to Lee's Campaign trail and hiked a little with the furry baby. I can't believe we get to live in this amazing place! I just love walking the streets (okay that sounds bad but still) while listening to all the foreign languages of visitors. Here are some photos:

  The Fredericksburg area has lots of parks and areas that can be nice for walking. So you will be able to find more. The older parts of town can offer some nice walks too. I do not live real far from some of the sites you posted.

    Gorgeous! Yay for a kitchen and dog friendly hotel too! I'm glad you get to take advantage of some amenities during your transition instead of shacking up in some crappy NoTell Motel. I agree with Natalie. Summer rolls are one of my favorite healthy go-to's. Hope your nerves chill out and you have a great week!

Welcoming the Sun...

Hello Everyone! Happy Wednesday! Sorry I missed yesterday but we were out and about getting things ready for the big move on Friday morning. For now we are still in Michigan and loving the relaxation of our hometown. Things have thankfully calmed a little seeing as we potentially have a house! Yay! We are just waiting for the final lease to sign from our Realtor and then we will have a place as of October 1, 2012. That's 3 weeks in a hotel suite and we are ready for our new life in a gated community in Virginia. Hooray!

Seeing as we are more calm, we sat outside in the sunshine yesterday for about an hour. Our neighbor friend came over and offered the usage of her kayak's. (My husband's family lives on a lake.) So this morning we headed to the lake early in the morning to take three hours of joyous kayaking around the entire lake. It was hard work in the arms but totally worth a little discomfort. Great upper body workout! We probably would have stayed out there longer but a dark storm started to come through and we were stuck in the middle of the lake. We moved really fast when we saw the dark clouds coming towards us. emoticon As you can tell though, we didn't get struck by lightening and lived through it. So much fun!

Meals:
Breakfast:
English Muffin with Vegan butter, OJ and some fresh cherries

Snack:
Fresh grapes

Lunch:
Leftovers of Boca Chickenless patty, 3 Korean rolls, some tortilla chips and an oatmeal cookie

Snack:
Oops! 1/4 Jelly Belly (supposedly they are vegan but does anyone know?)

Dinner:
Homemade Thai Green Curry with Thai Jasmin rice and a few tortilla chips

Snack: To be determined

We had such a lovely day, I'm going to be a little sad once the hubby has to go to work again starting on Monday. The good thing is I will soon have a gym to work out in at the hotel. emoticon

    You're doing great in the midst of non vegan junk food land! I hope you're weekend is settling down and the week brings peace, ease, a lease, more kayaking, and all kinds of other good stuff this change has to bring!
