Did everyone get to see the Transit of Venus? So amazing! It's always one of those "must do" things since it's only going to happen, oh, once in our lifetime. The husband and I have been looking forward to this event for a few weeks now and finally when the day came around to it, it was cloudy. Thankfully we went ahead at the last minute and went to our nearby lake lookout which was having a viewing event and had a good time. The clouds whisked themselves away and we were left with the viewing of Venus right in the middle of the sun. Even though it looked just like a black dot, it was quite remarkable to think it was another planet in between us and the sun.
So anyways, the hubby and I made a protein packed dinner for two and went to have a nice picnic. It was a bit windy but that didn't stop us from enjoying ourselves. We didn't get much exercise in but that's okay because we can only use this excuse once in our life, so we might as well use it when we can...
Breakfast: I've been trying new things for breakfast. The husband found a box of Malt o Meal at the store the other day and wanted to try it again. His parents used to make this all the time when he was young and he has fond memories of it. I read the outside package and wasn't turned off by the natural ingredients (minus a few preservatives) so I said okay. Now I'm trying to get used to it but haven't gotten the taste for it yet. I have tried various things in it but today was Sesame Fig Jam from Israel. It gives a nice flavor. I forgot to take a photo - sorry. I also had Michigan Cherry Coffee.
Lunch: Today was leftover day and miso. I made the miso in a large batch so that we could have enough for dinner too. I just love having it daily. I added so many things to it as you can see... My favorite is Korean Sundried wakame and Chinese White Fungus in it. Mmmm To the side I had leftover Japanese potatoes, cabbage and onions. For a cold drink I had leftover Michigan Cherry coffee with Trader Joes' unsweetened almond milk and a little brown sugar.
Snack: Leftover Flourless Citrus Mint Chocolate Chip cookies and a cup of milky tea (again with Trader Joes Unsweetened Almond Milk and brown sugar)
Picnic Dinner: Japanese Red Miso with Chinese white fungus, Korean dried wakame, carrots, onions and American radishes. We also had a traditional Japanese tofu "scramble" that contained a few Japanese sauces, tofu, carrot and fresh spinach. Alongside these two plates we had Korean brown rice and Korean sun-dried, salted seaweed. For dessert we had an apple each. Nom nom nom
For a snack after getting back from the event, we went ahead and make 1/2 c popcorn to share between the two of us. We make it on the stove instead of in the microwave.

Oh my goodness! I can't believe it is already June and I missed the entire month of May on SP to blog. I've been here and there getting calorie counts but not consistently - which I'm slightly disappointed in myself for not doing it. But as of today we can't turn back time so I guess the only other choice is to go forward. I've truly meant to come back here but haven't quite gotten around to it until today.
Two weeks ago we went on a mini vacation for about 5 days. Thankfully we had tickets to Indy 500, free from my in-laws. (Even better right?) So we were able to remove ourselves from the stressful neighborhood as of late. There are some strange things going on in our normally very peacefully, calm gated community. Not sure if it was the eclipse or what but it seems like everyone is fighting with their spouses and/or making a ruckus for everyone around us. I work from home, so it personally affects me more so than my husband. So, the time away was really rejuvenating. Plus it was fun to travel with the hubby and find some amazing vegan restaurants along the path.
When we returned, I got a bad case of food poisoning. We ate 100% vegan the entire time but unfortunately one can only trust your food if you grow it and cook it. For a few days we stayed in Michigan with my parents, visiting, and they had meat in the kitchen the entire time. I'm guessing it was from the cross contamination of this food that I got the food poisoning. Yuck! So, for a few days I have been completely unable to move around or even think about serious work.
Thankfully I'm back feeling about 95% better and decided that it was high time I got back to the gym again. Yesterday the hubby, furry baby and I walked about 3 miles to a park near our house for a dinner picnic which was like a trial-run for a run today. It went great so I knew that I wasn't pushing my body too much after a serious bout of illness. I ran 3 miles at a (9-11 minute pace) on the treadmill, 5 miles on the stationary bike, 100 situps and a good round of weight lifting. I am really tired now after this mornings' workout but I guess it's a great start to build my body up again.
Today's food has also been good - I'm hoping to blog about that later though. For now though I'll leave a photo from our walk last night!

Hello All! Sorry again for the late responses, I can't seem to get back into the swing of blogging here and on my personal blog genkikitty.wordpress.com I guess we all go through different spurts of things, right? I figured I would try it again and see if I can keep up with writing here too. I do keep up with everyone's blogs and journal entries - you SP friends are so dear to me.
Exercise: After my parents and guests left our house, I was left with a big mess in the house to cleanup and also four extra pounds. How does that happen in one week with exercise and also eating healthy? Thankfully I am determined still with exercise (I got up early so that I could workout before people actually got up when visiting us.) I am doing 1-2 workouts each day. I try to work out in the gym for at least 30-60 minutes with running 3-4 miles, lifting weights and then copious amounts of situps. Then at night when the husband comes home, we are trying to get out (weather permitting) and exercise together. That means another 60-120 minutes or running/walking or something... I have read in Runner World that this is okay as long as you are paying attention to your body and eating properly - both of which I am doing. I'm enjoying the double workouts - but I know I have to be careful not to go overboard. I make sure I don't run over 3-4 miles in the morning just in case.
Food: When we had visitors, I do know I had a bit more candy than normal and have ruined my appetite for healthy food. I heard that it takes two weeks to get back into healthy cravings and only takes one day to make your mentality to change over from healthy food to unhealthy cravings. That's a big difference. Thank goodness my family doesn't visit often, haha. So, I am working on getting those snack cravings out of my system right now. We are still eating vegan and enjoying every moment of it. It's strange when you first start veganism you have certain cravings for non-vegan things but now that we have been vegan over two years, we don't miss any of it. I'm adding more and more fruits and vegetables and trying to make sure I eat a healthy breakfast instead of something full of sugar.
Mood: I'm thinking slightly on the negative side because I have these extra pounds that I thought would go away after starting up the workouts again. I mean who gains 4 pounds in one week when being healthy? Stress maybe? Not sure... But, I'm doing everything I can possibly think of to lose those extra pounds and then continue on my hopeful weight for our Hawaii trip in a few months. Gasp, a few months! We still have to purchase tickets... haha All in all though, I'm trying to keep positive and keep going even though the scale is being a bit rude.

Tal Ronnen Grilled Marinated Tofu, coleslaw and a grilled sweet potato - yum! (Nope, didn't eat the whole giant potato though.)

Chopped Baked Tofu Salad Lunch
