Thursday Meal in Photos

Today was a little bit harder to stick to my calorie intake requirements. I'm thinking the constant workout has come harder after the holidays than normal. We took a whole week off from running over Christmas and now I'm feeling it with extra hunger and a little fatigue. It's okay, I'll continue to make myself reach my goals and then I will be happier in the end. After all, it's mental most of the time in my case.

Today's Breakfast: Vegan Hot Dog Scramble (I use Trader Joe's hot dogs since they are fat free and vegan) Also had some Red Rose Tea with soy milk and a little raw sugar and an orange.

Lunch: Felt really hungry and sluggish so I went ahead and had a bowl of leftover cheezy pasta bake. I love tomatoes! I forgot to take a photo but if you want to see it, look at meal in photos on Monday 1/2/12.

Dinner: We went shopping for more fruits and veggies so time was spare. I got home from the gym, took a shower and then was off with the hubby to the store. I wanted to eat everything in the produce aisle, yum! Maybe we purchased a little more than normal due to our hunger, oops. But, came home and made Boca Spicy Chickenless Patties to place on top of some "artisan lettuce" with a diced tomato and half a pretzel bun. It was great but I have to eat something else to fulfill my daily calorie count. Grrr

Seeing that it was a grocery shopping day, I didn't get to work out as much as I usually do. But seeing that I am tired today, I guess that is okay. Gotta listen to the body. I ran 3-4 miles (I lost my information when I had to get off to change a tv - grrr).

I watch food network when I work out, is that wired? Some people were laughing that they were working out and then watching food shows that they couldn't eat the contents. I was shocked because these shows just make me run harder and then I know what to cook at night afterward. emoticon

Wednesday meal in photos

Breakfast: in a rut, what can I say? Today was scrambled tofu with zucchini and swiss chard. (I'll upload photo later, can't find it right now.. oops.) Chocolate Cherry Coffee - 2 mugs

Snack: Two mugs of tea with soy milk and a little Sugar in the Raw

Lunch: two vegan hot dogs (smartlife) with a tsp of ground mustard (no preservatives)+ leftover greeny radish soup

Snack: 1/4 of a bottle of Bolthouse Green Goodness Smoothie after workout at the gym

Dinner: After returning from the gym I took about 1.5 hours to make this delicious looking Chickpea Soup with Persian Herbs but then my stomach started to hurt (stomach muscles too busy) and I just ate some leftover pasta with large chunks of stewed tomatoes.

Snack: I made the husband Coconut Banana Dark Chocolate Chip Donuts (also for breakfast tomorrow) and I had a Clif Bar Chocolate Chip since I still had to have more calories, carbs and protein for today.

    Oh, thanks for the idea Raw organic vegan. Actually I don't really like green smoothies as much in the winter - they make me cold. Every other time I love them! But you will see that I had a 1/4 serving of Bolthouse Green Goodness Smoothie. It was for sugar - I have hypoglycemia so have to have sugar after tiring runs. My stomach ache afterwards was from stomach muscles getting restless after a workout. One of those things we all have to deal with from here and there. haha emoticon

Breakfast was a tofu scramble with kale and cabbage- less than 200 calories + chocolate cherry flavored coffee

Snack: two mugs of tea with a little "sugar in the raw" and soy milk

Lunch: Vegan Hot Dog Scramble with Swiss Chard and cabbage + orange+ plenty of water + red leaf lettuce (no dressing)

Snack: one mug of tea with little "sugar in the raw" and soy milk

Dinner: Greenie Radish Soup (recipe on my site) + Swiss "fried" rice + 1/2 tsp garlic hummus

Snack: NuGo Go Free Dark Chocolate Trail Mix (Gluten Free) bar + 1/2 orange

American Homemaker - tried-to-be

For the last three days of our holiday vacation, my husband and I decided we were going to be hermits and hibernate. Yep, that meant no work, difficult chores and etc. Seeing that our normal life is hectic, we generally do not get this sort of relaxed treatment so we were totally besides ourselves. Then I got the urge to get into the kitchen and make something for dinner. Sadly, my inspiration was a new glass pyrex set of dishes with lids that we got for Christmas, per our request. I decided to make something with the large casserole dish since it looked so inviting and I couldn't remember the last time I made anything in a casserole type of dish.

Okay, so maybe it was only 10AM but I was totally into making the dish. I decided to make a homey (continuing with our hibernation theme) three vegan cheese pasta dish. I pre-cooked everything and then tossed it into the refrigerator. I was so thrilled to have a tin-foil covered dish in our kitchen waiting for dinner. I happily announced to my husband that he finally got an American housewife. Well, maybe one in training? I cook everyday but nothing that requires a casserole dish or re-heating it in the oven hours later. emoticon

Then my husband announced that the normal "American housewife" probably would make a casserole and set it in the fridge for later re-heating by the incompetent husband that can't cook while the wife was away. Ah, well, at least I tried... Thankfully it turned out great and the husband had 1.5 bowls full! That's a record I think, hooray!

As you can tell we didn't get any exercise in today (besides some fun situps on the exercise ball) but it was our day off so I'm not too disappointed.

Note: Sorry about the photo, it wasn't the best quality but my DSLR photos are too large to put on sp. So, this is a cell phone shot. I will have better photos on my personal blog at by 1/4/2012.

Happy New Years!!!

Happy New Years everyone! The husband and I have vowed to take this last weekend of the old and new years as a break from just about everything. Our last three days of relaxation before we hit the new year running. So, I haven't gotten online to make much for new years resolutions but I have come up with some in mind already. I will be writing them up hopefully tomorrow when I'm back into things. For now I will leave you all with these cartoons:
