Fresh veggies for dinner never tasted so good after 5 mile run and 2 mile walk in the cold and dark winter evening. It was fun to run last night in the dark, we got to see all the Christmas lights glistening and it really brought our holiday spirit up again. Thank the Good Lord for running in the cold!

For those of you Vegans out there - did you know that Caribou Coffee can make a Green Tea Latte to order? I know that starbucks can do one too but unfortunately they do charge for the usage of soymilk in exchange for cow's milk. In addition, you can ask for no syrup which is just sugar and empty calories. So, what you get is a yummy green tea soymilk that is all warm and comforting. Mmmm Just thought I would mention to everyone since I was so happy to find this out today when I was writing for work at the coffee house.
This week has been very challenging for me. The husband and I got back from over a week business trip to Michigan and Virginia. (Yeah, again) It's harder to keep eating healthy food on the run while also eating vegan but we certainly did everything possible to keep to our normal practices. We purchased fresh apples while traveling and always tried to get as many vegetables as possible. It worked out great but I'm afraid I did gain a four pounds (not sure if it's weight gain or just bloat). We even worked out, including the night we arrived in VA after a 12 hour car drive.
We walked around a lot during our free moments and had a wonderful time together enjoying the warmer weather and tourist hot spots. (Including a Sanrio store!!!! Swoon!!!) I love traveling and could do it more often if money and work would allow. haha One day we walked around 8 hours (our free day) sight-seeing - it was a great workout and such a delightful time. We just parked and walked all around, even if it was a mile from one destination to the next. So, I say we did an okay job.
Unfortunately, I did catch a cold while gone. It has kept me very groggy and really tired. More than occasionally I found myself sitting inf ront of my computer staring for who knows how long. If anyone were to walk past me while working, I'm sure they would think I was on something more than cold medicine. haha So, when we got home I started a "detox" with only homemade foods and as many vegetables as possible. Here are a few days of my breakfast and lunch meals.
My husband and I were gone again for another week in Virginia and the two small weekend trips to Michigan for work. Thank goodness we had the opportunity but even more thankful to be home for a few days.
Yesterday I was thankful to get out to the gym again and workout a little. I'm fighting a cold I caught while in Michigan (I'm guessing?) so I couldn't do much but did manage a reasonable workout. 2 miles running, 20 minutes bike and some lifting weights and yoga. Not that great but not bad considering how congested I am right now - grrr... Plus the medicine makes me really tired so...
After my workout I was invited to attend a day out with two delightful ladies (a momma and baby) to the zoo. I absolutely love animals so even when I'm tired and sick, I can't say no to the zoo. This zoo is a rescue zoo so it makes me feel better that the proceeds to the zoo go towards healing these furry babies. It included two hours of walking around the zoo but I kept energized by eating an apple, drinking apple juice and eating some carrots dipped in hummus. Yum! I took it along for the ride since I didn't have chance to eat lunch before leaving.
When I got home I was so tuckered out I managed to get a little work done and then collapsed in bed for a 20 minutes regeneration before the hubster came home. Then I made an easy homemade spaghetti with dinosaur kale all from our local farmers market. Yum!
Hoping now to get in a little workout tomorrow and maybe not be as tired and cranky. Haha
