Don't you just love warm weather? We definitely prefer it to cold weather - Australia or another tropical place would be ideal for me again. I miss tropical winters. But for now, we are enjoying our hot days and cool nights. Yestersday we were about the only ones out in the sunshine running 5K in over 100 degrees! Hooray! Can't say I liked all the sweat but at least it was a testimony to the hard work we put into the run. Lol
Hopefully everyone is enjoying their summer! Check out my site for some interesting new recipes. Today I made a healthy inside-out peanut butter cup muffin! Yum! I hope to have the recipe up today! Enjoy!
After our camping trip I was a little worried about the weight scale. It was stating that I had gained around 4-5 pounds. Yikes! Thankfully for the last two weeks, I have been working hard on exercise and counting my calories again. It worked wonderful! I am proud to announce that my weight is back down to where it was before I left at 116.6 this morning. Yesterday it was 117.4. Remember I'm under 5foot so this is totally a healthy weight - may sound low but really isn't for my height. Actually, I have about 10 pounds still to lose to be in the middle healthy range for my BMI. Still working hard to get those pesky ten pounds off.
Isn't it truly amazing at how the weather keeps changing daily? It's great though because the weather is training our bodies for different things. Today was high heat and dry air. It was great training for breathing and keeping a nice, moderate pace. It's all a challenge but at least it's fun! Plus, when you get back you get to eat delicious homemade falafel wraps! Yum!!!
Yesterday was a much better day for exercise and keeping within my calorie count. I think I have been eating around 1500 cals so I had to reduce back down to 1300. 1300 cals a day seems to work better with my body and for exercise. I can feel bloated and groggy when I eat more than 1300 for some reason. I'm taking it just as my body is asking for less. Plus, the healthy food is always a plus!
Breakfast: Raw vegan Oatmeal
Lunch: Chopped Baked Tofu Salad
Snack: Fruit Smoothie - homemade
Dinner: BBQ bean burgers, rutabaga "chips", sweet potato "chips", cucumber and etc. Yum!
Things are always busy - but is that an excuse of mine? I'm not sure. Anyways, I have found that I have gained about 3-4 pounds in the last few weeks. Actually, I saw the increase after we went hiking. Boo! I hiked and ate reasonable but I guess the fat content was too much or something and there was a gain. So, I have been trying to work hard at watching my food and working out but unfortunately it hasn't been going well. So, I'm back on here to assure myself that I am doing everything possible to get healthy and bring that weight down. Those last ten pounds or so are extremely hard to get off! Grr Pounds!
We found and ate our first home grown cherry tomato of the year! Yum!
