2/14/11 Daily Review

Just another day in our household, we do not celebrate commercial holidays so we didn't plan anything special. My day was full of household chores, writing an article for work and also doing some more diet related blog entries on my site. I find it very fulfilling to be able to write blogs for fun on my website. I know it sounds strange since half of my work right now is writing for various companies but I find it pleasant to go over what happened during the day through writing about it. Additionally, it's nice to share with others my thoughts and how I am doing my lifestyle change into a healthier one.

Breakfast: I had two slices of sprouted whole grain toast. Added to that I had a Chinese Yam filled pancake and some Pirates Brew coffee.

Lunch: Leftover Hearty Lentil Stew from the You Are What You Eat Cookbook. It's an okay recipe so I wasn't terrified of eating the leftovers.

Dinner: A few pretzels as I waited for dinner to cook. The main course was Aduzki and Millet Salad. It's a warm salad just like the PCRM brown rice salad but only with millet. Tasty!

Snack: Herbal Tea

Day in Photos: 2/11/11

Today was another busy day for me, I was writing recipes and updating a lot of things for work. So, I didn't get to eat as well as I had hoped. It's still leftover week, so there wasn't really much to be eaten and I didn't want to make a full meal. I managed to stay around my calorie count but not happy with my choices.

Brekkie: I was really hungry this morning but wanted to have freshly ground peanut butter from Whole Foods. So, I decided that I was going to have Sprouted 7 Grain Bread from Trader Joes and 1 tbsp peanut butter spread among the two slices. I was shocked to see that there was 100 calories in 1 tbsp after looking it up here on SP! Is this true? I also had a small light smoothie of Trader Joes Unsweetened Vanilla Almond Milk (40 cals per cup!), frozen Michigan blueberries from this last summer and some spinach. A little tasteless because the blueberries lose flavor after freezing but it was something different at least. I also had a Vegan Deva Mulitvitamin and also some Pirates Brew Coffee.

Lunch: Vegan pizza that we made a week or two ago. I know, I know..not good... but at least I ate something.

Snack: Darling husband came home early and we wanted to take the pooch to the puppy store and also our local Coffee Roaster to pick up some more coffee. So, I grabbed some Trader Joes Vacuum Fried banana chips (what is vacuum fried I have no idea) but they are preservative free and no added sugar. Then when we got back I was starving! So, I had some Goji Berry Trail Mix and then also a vanilla cupcake (no topping). Not happy about the cupcake..

Dinner: Unfortunately the husband was supposed to make dinner tonight (Friday is his night to take me out - but he forgets just about every week) so nothing was planned. Seeing that it was getting late and I was starving, I had more vegan pizza. Grrr... Not happy with that either...

Total Calories Eaten: 1,387
**went over today and am not happy with it since the calories were not good calories. Everything was vegan but I had whole wheat pizza with processed vegan cheese and vegan pepperoni. At least now it's out of the house so I can't eat it - not going to purchase for a while.

    Yes, peanut butter is evil at about 200 calories for 2 tbsp but it's soooooo yummy.
1387 calories isn't over...just not at the bottom.
Now you can go grocery shopping and restock.

    Vaccuum fried, interesting!

That probably is right about the pb. Most pbs have 190-200 calories for 2 tbsp, even for the natty ones so that sounds about right.

Taxes are finally finished! Yay! It's a little bit of a hassle living in a state that charges for federal, state and city. So much paperwork to fill out and if you have your own business it can get very confusing! But, thank goodness I'm finished for this year!

Day in photos:
Brekkie: Date Millet with Corn. This I made in our Japanese Hello Kitty Rice maker. So easy and very filling! No processed foods and all organic! Yay! I paired it with Michigan Cherry Coffee and a Vegan Deva Multivitamin and Mineral (which I take every morning). Oh, and there was also half a grapefruit. (393 cals)

Snack: 1/4 cup of raw cashews. I have these amazing plastic containers that are 1/2 cup each. It's so nice and simple to just toss in some raw nuts or dried fruit into these containers without measuring cups.

Lunch: There was not much for leftovers that I was in the mood for today so I made some wild rice in the rice cooker. Then I sauteed some carrots, frozen corn from this summer, garlic and bok choy as a side dish. I added some Korean kimchi and it was an entire meal. Yum! (196 cals)

Snack: I was really thirsty so I had the Adina Holistics Vegan drink that I tried to drink yesterday. It was delicious! Refreshing but not too sugary. The entire bottle is 100cals! I had this in the afternoon before the end of work. Then, when we went shopping we took a long time so I was really thirst by the time we drove home. We snacked on Goji berry trail mix, whole foods deluxe trail mix, and 1 dark chocolate covered almond with cocoa powder from Whole Foods bins. When we got home I was dying to try out the freshly ground peanut butter we made at Whole Foods. It was the first time we tried it and it is delicious! It is just enough flavor to make a good snack but not too sugary like pre-packaged brands. I threw this on top of some freshly bought Cocopops.

Dinner: The husband requested to have Japanese curry so I had to make it for him even though I wasn't very excited about it. But, we have to please our partners, right? Okay, so maybe I like to spoil mine but still... he was happy to have spicy Japanese curry over brown rice. I threw in some thai baked tofu just for more protein. (137 cals)

Snack: We found Allegro tea at Whole Foods so I wanted to try it out. Then we also shared part of a blood orange and kiwi. I'm not impressed with the Allegro because it is slightly like a medicine taste but the husband didn't mind it - he thought it reminded him of a chai. Allegro is supposed to be all natural ingredients and no preservatives.

Total Calorie Count: 1,215

Sorry about the delay, I have been taking photos but haven't had the time to load them onto my computer. Finally I am getting to the photos and also my daily blog entries. Today I also put up a few recipes onto my site. It's just my personal blog for fun and to share recipes and ideas with others.

Anyways, on to the food:

Breakfast: Cabbage and Rice Breakfast. I also had a few kernels of raw cashews, a blood orange, and Pirates Brew Coffee (or so I like to call it Pirates Booty). (299 cals)

Lunch: Tofu Shirataki Noodles made into low-calorie mac-n-cheese. Also had a little baby bok choy drizzled with a little apple vinegar from a farm in MI. (178 cals)

Snack: Adina Holistics Passion Peach Drink. It's an all natural, vegan drink. I drank a few sips but then wasn't into it so I stopped and placed it back into the fridge. Additionally I made vegan vanilla cupcakes for my husband but then ended up eating two of them. Oops! No topping though - they were good right out of the oven.

Dinner: A little of everything thrown together for a meal since it's leftover week. We had some plain chinese noodles with tomato sauce & homemade japchae made with thai baked tofu. (422 cals)

Total calories for the day: 1,220

    Your food always looks delicious! My grandma makes homemade japchae too -- I'm not a huge fan of it but the way she makes it is so awesome, I could eat buckets of it. LOL

I've been meaning to ask you, did you once live in Korea too? I think you eat more Korean food than I do!
