Small class reunion...Ex BF coming home from England

Tuesday, March 19, 2013

It was in High School and we had a thing. I wasn't smart enough for this "Brainiac" so, I broke it off. Now, 40 years later we'll see each other again. I didn't think I could compete back then. Such low self esteem even back then at 120#'s. Do I want to look fabulous? Of course! But my Hubs likes me just the way I am! I'm not where I want to (weight wise) but I'm where I am loved! Good choice, right? emoticon

Ty Safari...I didn't go to the "big" one because of my weight and then I saw pictures!! I would have looked pretty good at our 40 year reunion, unlike some others whom I goo goo' emoticon ed and ga ga'ed at back then. Hahaha I may be overweight but I still have my hair, I mean dignity!!

Yip! I cringe when I think about all the frogs I have dated.
That reunion would make me diet like crazy.
Great to have a wonderful husband and family. That is the real achivement.

Grandoggie went home

Monday, March 18, 2013

I had my Grandoggie for two days so my Son could celebrate St Patty's Day. She had some corned beef and cabbage. Me thinks we should have thought about this was first. That is all!! Hahaha.... emoticon

It's half my Nationality

Sunday, March 17, 2013

Happy St Patty's Day everyone. We celebrated today with corned beef and cabbage, just as I should have. My Great Gramma's name was McLaughlin and we made her proud with our feast. I for one am not crazy for the beef but Hubs and Step Father loved it! It was my first. Hubs and I always went out and I got chicken....sorry Gramma! emoticon emoticon emoticon

My First corned Beef Brisket

Thursday, March 14, 2013

Since I'm a blonde Irish Lassie, I thought I would try my skills at making a corned beef brisket. My cousin said it was easy. Just boil it for 5 hours, add your potatoes and cabbage and you're good to go. Could you put it in a crock pot? Would you do it that way? I suppose I could look it up in our recipes but I would rather my SPFriends??? emoticon emoticon emoticon

Ty Bama...I added the seasonings and in my crock pot, cooked it for 8 hours on high. My cousin said to boil it so I converted it to the crock. I like the longer and slower version you suggested. Unfortunately, I did not like the beef but I promised to cook more for my Hubs. He gets the sandwiches which he is glad not having to share... emoticon .ty again

My reply is too late for St. Pat's Day--- but I make corned beef in my crock pot and it is just delicious! I place the brisket in the pot, cover with water, (sprinkle in the seasonings if you like)---- I put the knob on high for about two hours, then turn down to low and continue cooking for a total of 10 to 12 hours.
I refrigerate leftovers for Reuben sandwiches. The chilled meat is easily sliced in thin tender slices. YUM!
