I knew that as soon as I publicly acknowledged my weight loss that it would cease.... yep, my weight hasn't gone down in a few days. Hey here's a thought, maybe I should add exercise back into the equasion! LOL... 'bout time. =)

I still feel really good and have little to no desire to "cheat" with higher fat foods. If I want something, I generally just have it and then either try to make up for it that same day or the next. The fat has been creeping up for a few days and I really want to get that number back down where it should be.

Feeling great, but I'm not weighing myself for a few days (water weight gain would make me sad so I'm not gonna look... I can wait =).

I'm actually still shocked that going vegan hasn't been harder. Yesterday, I mentioned mac&cheese to a friend... and since I had to stop for salad fixings etc I checked out the non-dairy options at the store. The only thing I found was Amy's Rice Macaroni with Dairy-free cheese. So I got two (one for DH)... and we both cleaned our plates! It was really rich and had that gluey/creamy quality that made me have to look at the box again to make sure it wasn't really dairy cheese. It's really high in carbs and fat, but if you ever have a craving for cheese and you have decided to go vegan with your food... try it. I promise that you'll like it, if not LOVE it.

My friend is on a dairy and soy-free diet because of newly diagnosed allergies in her baby... but she's jonesing for chocolate!! The only vegan chocolate chips I have also have soy lecithin in them (which maybe she can have, but she'd rather not for now). I said she should try the Moosewood 6-minute chocolate cake. It's vegan, fast to make, inexpensive, and SO tasty... I make it often for company, gifts, and I used to make it often for us too! Now I want to adapt it to be lower in fat... but still be as good. Wish me luck!

I also have to figure out a vegan low-fat pineapple upside-down cake for my dad's birthday that's coming up fast. Any advice? Any good recipes out there? I don't want to make a bunch of test runs... because I'd just be too tempted to eat them all! LOL

This morning I was cleaning out a corner of my cupboard and found a vegan chai tea packet with a bit of coconut oil in it. Wow, it was so good! What a nice morning treat to enjoy every now and then. Yes, even as a vegan I can have excellent treats... who knew?!?

For the last four days I've been following a low-fat vegan diet as outlined by Drs. Neil Barnard, Ornish, Esselstyn, Fuhrman, & others. In those four days I've lost 4.5lbs. I've been on many diets and have been a vegetarian since 1984. I've never dropped so much weight so quickly, and I feel great! I feel lighter and more... awake, if that makes sense. I don't feel deprived at all or like I'm really on a "diet"... I'm just choosing to eat stuff that's better for me and my health.

For 27yrs I was really worried that I wouldn't be able to stick with this lifestyle because of cravings (I am addicted to potato chips and cheese). But now that I've taken the plunge and made the commitment... I haven't really had any cravings at all! OMG... if I'd have just had the courage to really try... but I can't think about the past, I have to go forward. I've been eating as a vegan now for over 7 weeks (about 98% of the time) so I know I can do this.

I haven't even done any exercise really since last April or so. I plan on adding it though... because I woke up yesterday and actually wanted to! I've never before in my 41 years on the planet ever woken up wanting to be physically active... especially just because I was feeling good about my health. For the first time I feel like I'm really on a good path that I can follow... and I'm excited to see myself evolve into whatever I will become.

I'm back, I had a mixed first day back but I'm here and happy to be here again.

Last month I tried being vegan and feel really good about it. I wasn't trying to be "healthy vegan" but I wanted to see if I could do it... and I did! I'd give myself about a 90-92% for the month... which is huge for me because my history says that is I'm not 100% then I beat myself up and give up. Now, I'm proud of myself for doing the 90% AND STICKING WITH MY PLAN for the whole month!

Now I will make up a new plan to choose healthier alternatives instead of mostly "comfort food" (high fat high salt). I know I can do it more and more often in the next month & beyond.

Happy New Year everyone!! I wish you the best, believe in yourself and you will be surprised at all you can accomplish. =)
