I'm still here-Barely

I am still here. I know I haven't cooked in two weeks, but I have been battling the flu as well as activities for my sons. So, I am trying to start up again. I have decided, if I can't cook that evening, an evening of left overs it is.

I am planning my evening meal as I type this. I know it will contain a chicken of some sort, vegetables, and fruit. I have a son starting wrestling season and he needs to watch his weight. So we are cooking healthy for him and me.

Now that I am back to 100%, I am looking forward to flipping through the many cookbooks I have (and yes, I do have many) to see what is for supper.

    Hi Bikermom129,

So sorry to hear of your challenges in the past days/week. I think your idea of leftovers when no time to cook is a great idea. No shame there! I would imagine having your son on a healthy eating regimen will help also. It's always good to have a "buddy" for this kind of thing. Can you walk together, too? You'd have to do it after dark if he's one of those kids who won't be seen with his mom. ;D

I keep on asking my husband to walk with me, but so far no luck. I'll keep asking though!

Day 6 Recipe-Bar B Cups

I am making one recipe per day from my many cookbooks.

Tonight was Bar B Cups. I remember eating these as a kid and have had many versions.

3/4 lb ground beef
1 onion diced
1 tbsp brown sugar
3/4 cup bar b cue sauce (I used Kraft original)
1 tin hungry jack biscuits
3 slices cheese

Brown ground beef and onion. Drain off fat. Return to pan and add brown sugar and sauce. Meanwhile, flatten out biscuits to line an ungreased muffin pan. The biscuits act as muffin cups. Fill muffin cups with meat mixture and top each with 1/4 of a slice of cheese. Bake 400* for 10 mins.

My kids loved these. They are great cold the next day and reheat well. I think next time I'll use pizza sauce and mozzarella.

Already looking for tomorrow.

Day 5-Recipe Chili and Cinnamon Rolls

I am trying to cook one recipe everyday from the many cookbooks I have.

Today I made Chili and cinnamon rolls. It is always a tasty meal in my family.

The Chili recipe came from an old church cookbook.

2 lbs ground beef
1 onion diced
1/2 tsp garlic salt
1/2 tsp sugar
4 tsp chili powder
1 large can tomato juice 64 oz
2 cans chili beans

Brown meat and onion. Add seasonings and juice. Bring to boil and simmer one hour. Add chili beans and simmer another 30 mins. I serve with crackers and cheese.

Well, Sunday didn't go as planned. I woke up late for church, headed to my sisters and watched my niece all day. Then I didn't return home until 8:00 that evening. So nothing was cooked and in retrospect little was eaten at all that day. Recipes for today will be coming.

Day 3 recipe-5 Can Casserole

This is a supper fast and easy recipe. And after a day of cleaning closets and drawers, I needed fast and easy.

You will need:
1 can tuna,drained
1 can chicken and rice soup
1 can cream of mushroom soup
1 can evaporated milk
1 can chow mien noodles

Mix all 5 ingredients in a bowl. Put in an 8x8 pan. Bake in 350* for 30 mins.


I got this recipe from an old church cookbook I have. Tomorrow is another day and another recipe.
