Hi everyone! I am working full time now and I'm reaching out for support. I am struggling with how to get everything done. I have always been fortunate to work part time but recently upgraded to full time status.... I have been putting in 40 hrs plus a week and I am praying that as I get the hang of the job, the requirement will be less. I miss you all bunches.... I miss time at home taking care of things and I hate delegating .
I really am looking to you all for your go to recipes. I love my crockpot. Do you all have anything that you love and make every week? all suggestions appreciated. Sending you much Love. Tricia emoticon emoticon

    I'm not a big crock pot user Tricia, so I can't help you out there. I know if you do some research on some of the cooking sites like cooking light or skinny kitchen or even some of the cooking sites like allrecipes.com, you'll find loads of recipes that your family would love. I think just about anything type of food does well in a crockpot. I've made corned beef & cabbage recently in the crockpot & it was delish! I also have a baby back rib recipe that I made in the pot & it is yummy! Oh wait, I have a chicken one that's delish! I'll hunt it down & pass it along to you in sparkmail! Hang in there w/work my friend...it can be a bit much changing from PT to FT. You'll catch on! Good luck!

    Still thinking here :

Make a schedule of meals on Sunday and post it on the fridge where everybody sees it. No calls of What's for dinner etc....

You can make of list of items needed fresh to pick up at the store

Delegate a certain night for soup and sandwiches.... I still love a good BLT, pastrami and cheese, or grilled cheese sandwich. Make it a little special with a slice of ham and tomato etc.... Avocado on a blt is good also.

Breakfast for dinner ...... Eggs Benedict with ham and Spinach, Blueberry pancakes, potato pancakes (I buy the box kind that you just add water and an egg)with breakfast sausage, applesauce and a dollop of sour cream. (My Dad'd favorite with a side of english muffin)

Taco night - You can brown the meat on Sunday for the week ahead and reheat.

Break out the grill - hamburgers, a side salad and french fries or potato salad from the deli.

Make your own pizza night...... Go ahead and use a boboli or refrigerated dough. You have worked all day!!!

    Hey Tricia,

The crockpot will become your best friend. I always buy my meat on sale then freeze it for later use. Some of the local stores up here in the Boston area have 5 for $20 or $25 meat package deals. You can mix and match. I almost always grab the marinated porktenderloins by Hormel usually. Lots of different flavors. Italian, Terriyakki, honey mustard. I buy the biggest ones I can. Normally marked at $12 to $14 but pay only $5.00 for each. Depending on the flavor I throw these in the crockpot, sometimes 2 at a time, with mushrooms, baby carrots, quartered carrots, red potatoes. The terriyakki one I add sliced pineapple and onion etc... or the easiest is to throw in just as is and shred it when you get home and add your fav barbecue sauce for sandwiches. If I do that I place large rings of onion on top of the tenderloin so they cook down and can be used as a topping on your sandwich if you want it. All these can cook on low 8 to 9 hrs etc.. or high 3 to 4.

I have a huge collection of crockpot recipes on my computer. Many are WW so let me know if your looking for something in particular.

    Chili beef roast with carrots, onions, potatos and canned tomatoes, ham and beans! Now, you did it! You made me hungry for all those things! Don't forget to make double batches and freeze half for a quick meal another time. Hugs!

    Our favorite is cilantro lime chicken for tacos... Did I share that with you yet?
It's really simple
Just chicken breast or thighs, can of rotel, at least 1/4 C. of lime juice (we usually juice about 3 limes), about 1 Tbsp dried cilantro or you can use a bunch of fresh, season with salt, pepper, cumin and garlic, just cover with chicken broth, cook on med/lo for all day. Shred chicken and serve on tortillas. emoticon

    Parchment-Baked Fish and Tomatoes
Aluminum foil can be subbed for parchment to make the packets.
Serves :4
Takes 10 min. to prep and 15-20 to cook and NO cleanup.

1 (8-oz.) package green beans (haricots verts)
1 red bell pepper, thinly sliced
1/2 red onion, thinly sliced
2 tomatoes, chopped
2 Tbsp. capers, drained omit to reduce sodium
1/3 cup green olives, quartered
4 (4- to 5-oz.) white fish fillets
salt & pepper, to taste
1 Tbsp. olive oil
1 lemon, wedged
1/4 cup fresh basil

Preheat oven to 400°.
Divide first 6 ingredients among 4 (17-inch) squares of parchment paper or foil. Top each with 1 fish fillet.
Sprinkle fish with salt and pepper; drizzle with olive oil.
Squeeze juice from lemon over fish.
Bring parchment paper or foil sides up over mixture; double fold top and sides to seal, making packets.
Place packets on a baking sheet.
Bake at 400° for 15 to 20 minutes.
Place each packet on a plate, and cut open.
Sprinkle fish with basil.
Serve with brown rice or pasta because the packet juices are delicious.

    Chicken breast and Rotel in the crockpot while you are gone. When it's done you can use it for tacos, to top rice, or even a salad.

  I love buying a bag of frozen meatballs and cooking them in the crock pot with Mids Sauce. They can be served so many ways.....plain - right out of the crock pot - over hoagie buns - over couscous......delicious - and filling.

So, Unfortunately I have found a weight loss plan that is fool proof. At work Thursday, I was eating a small candy cane, and the cap on my tooth came off. It's a back tooth and it has had a root canal so it doesn't hurt but they can't get me in until Monday. This happened Thursday . I'm thinking, REALLY? I think it's a crazy that Monday is the first day they can see me??? What the heck. Ok. So I made a big pot of "skinny soup", put it in the blender and poof. Instant weight loss plan.
We had a Christmas Parade last night, so we needed to be downtown. (poured the rain by the way) So my husband asked me to meet him at the local chicken wing restaurant. Ummm? really? I asked him if we could eat across the street at another restaurant that served soup(my food of choice these days.) and he said he had already made plans to meet our friends there. Grrrr. What??? We never eat out with friends. Ok. So I managed to eat fries saying that I had eaten a late lunch.... Lies.... Who wants to tell every one my teeth are falling apart. emoticon Oh well. Hopefully not much of the tooth broke off with the cap and they can save it.
So when you see my ticker moving, you'll know why:)
P.s. This may be Gods special plan for my weight loss over the holidays. lol. Gotta love it! emoticon

I don't know how we could be busier!!! This is cooper. Our new pound puppy. Boxer and???? Anyway. The good news is I am walking more, the bad news, I have no time!!! lol. Just wanted to share a little of what's going on with me. It has been a little crazy this summer with the job search. I know I shared a little with some of you and I just wanted you to know that I will be staying with the company that is buying out our hospice. Effective Sept first I will be with the new company. I received 5 job offers but that one ultimately was the best opportunity and fit my into my life and schedule. fingers crossed . Thought I would include a couple pictures. Our peach tree was loaded this year. just had a ripe peach this morning. yummy.

unfortunately, the branch broke with the weight of the fruit. We are trying to save it. Any suggestions? Here is a pic of the fruit from one branch!!!(turn your head upside down. lol)

    Wow, what a great thing you got the job!! And got to stay where you already were! Such a cute baby!! And those peaches! Very nice...love peaches! Sorry about the branch...hope you were able to save it. Some people put wood braces under these big live oaks down here to keep it from snapping off. Maybe that would work, if you haven't already done something.

    Yum! Yum! I've been eating peaches like crazy lately...they're so juicy & good! HUGE too!!! I hope ya can save the tree! And the babies are precious!!!

Yep. That's right. I had a very successful weigh in on Monday! 7 pounds gone. Bam. emoticon If you read my last blog, you know that Monday was my weigh in, in which I needed to demonstrate the ability to loose to get a discount on my insurance. So Monday was great. The rest of the week, not so good.

Luke and I both have sinus infections.... When I get a sinus infection it triggers a flair up of my Trigeminal Neuralgia which means pain in the left side of my face. Who knows what happens when I hurt. That's right. I eat. Not veggies either. I am on steroids and antibiotics so hopefully will be back on the mend soon.

Unfortunately We lost our little ferret Thursday morning.... I was so glad I was home when my daughter found him. Luckily he died peacefully in his sleep. We had him for 7 1/2 years. He was a good little thing. So needless to say we are grieving. emoticon

I did manage a small bike ride emoticon at a nearby state park today. I went with my DH and it was the first time I took my mountain bike on mountain trails. Must say I prefer the rail trails. I like long distance flat. About 3/4 of the way through I was sitting back too far on my comfy seat..... so the seat tilted back and DH tried to readjust it. Back on the bike, only to have it tilt up again. I'm sure I don't have to tell you all how terribly uncomfortable that seat was pointed up.... Why do they put a pointed seat on a bike anyway???? We did have a nice enjoyable picnic lunch. Best emoticon PBJ I have ever had. emoticon
So now, I'm sparking and watching undercover boss. I have a little bit of a fever tonight and probably overdid it today. Time for some rest. emoticon

    I am happy to see another successful biker! Be careful out there! I fell off my bike last week (blog posted with details) and do not want you to suffer the same thing. Forget those rough trails! After falling on the rail trail, there would be now way I would do a rough trail...just my opinion! emoticon on the 7 pounds! emoticon emoticon
Hope you feel better soon on the sinus infection! Have you ever tried Neilmed Sinus Rinse? I use it all year long and it keeps my sinuses from getting the infections. I used to get them 2x a year until I used it! emoticon

Sorry for the loss of your ferret...I know how ya feel, I was the one who found my daughter's gerbil ...& I know it would have traumatized her, if she would have found it. Lucky us!
Glad you're enJOYing the bike rides, well...except for that seat! Yikes!
