I had an awesome trip to Walmart on Saturday. I truly despise Walmart, so I was thoroughly blessed to have an incredible shopping experience. Not only did I get a premium parking spot, but I got everything on my list and saved $10 in coupons!
Our dinner selections this week:
Beef roast with carrots/potatoes with mushroom gravy and rolls
Ratatouille with turkey sausage and french bread
BBQ Chicken Pizza - Spark recipe
Southwest Chicken Soup
Homemade Beef Stew
Now you may be looking at this list and thinking, "that doesn't look like diet food" And you are right it is not. My main issue is not eating healthy, but portion control. So each of these dinners fit into a balanced day of eating healthy portions. When I have a higher calorie meal for dinner (Southwest Chicken Soup - it's cheesy), I adjust my lunch considerably (100 calorie salmon fillet with salad and fruit and a low cal afternoon smoothie).
During my shopping, I also invested in freezer bowls for making several ready made lunches of the left-overs. Two soups plus ratatouille will provide 4-5 additional servings that can be frozen for next week.
I am just going to finish patting myself on the back and then get back to work
