ETLC: Chicken Asparagus Penne

Monday, April 30, 2012

this is what I made for dinner tonight

here is the link to my recipe for it in SparkRecipes

recipes.sparkpeople.com/recipe-detai
l.asp?recipe=2094703

here is how the nutrition breaks down

a couple of notes, tonight I used campanelli pasta (looks like little trumpets) instead of penne, and also, don't skimp on the butter in this dish, a tablespoon isn't a lot, and really does enhance the flavor

That looks absolutely fantastic!! I'm going to have to try it next time we can get decent asparagus in our grocery stores. (You never know here in South Texas. We tend to get our best asparagus in the winter, for some bizarre reason. I miss Wisconsin, where it grew wild in the ditches...)

Eat To Live Challenge (ETLC): Goals & Feelings

Sunday, April 29, 2012

This is for a challenge that starts tomorrow for a team I am on called he Bad Ass Rock Stars (BARS) currently accepting open enrollment (well, at least through Sunday midnight - sorry I didn't do this post earlier, but I've had a busy weekend) - it is a small team founded on the basis of a Jillian Michaels challenge that grew into a challenge support team

Tomorrow starts the "Eat To Live Challenge" which is focused on the basics of nutrition, and awards points based on staying in range, streaking on staying in range, working toward a personal nutritional challenge, and healthy recipes

The challenge runs through May - so you will be seeing quite a few blogs from me which I will preface with ETLC that will include recipes I'm trying

My goal during this challenge is to eat more consciously and cleaner - and to be honest with what I am tracking

I have my first 10K coming up in just a month, and I do not feel like I have been eating to fuel my body, I feel like I've been eating more for comfort and convenience - I need to focus on the things I can control, and food/calories is definitely one of those things

One of the components of the challenge is "to pick something you are struggling with eating-wise" each week - for my first week, I am going to pick soda - I'm just going to eliminate it for that first week - if you've followed me for anytime, you know I struggle with this on and off, and currently I am having a big problem with it - I know that soda isn't technically "eating" - but the calories are there, and the consumption of it has a big impact on my ranges

Going into this challenge I am very hopeful - I expect to see physical results with these dietary improvements (less body aches, more energy, etc), and I am a bit nervous, I have been playing a bit "free and loose" with my ranges lately, and that is showing on the scale - maybe if I focus on being mindful of those ranges (calorie/carb/fat/protein) then my weight loss will gain some momentum again

Here is a link to more details about the Eat To Live Challenge www.sparkpeople.com/myspark/team_mes
sageboard_thread.asp?board=20739x51531
x47499064
and if you are interested in checking out the BARS team, you can explore it from that link as well - although if you are reading this past Sunday night, the team might have gone back to private

Round Things - Hoops & Dishes

Tuesday, April 10, 2012

I wanted to make two blog entries, but they were both round, so I thought I'd combine them

emoticonthe first is the Living The Good Life points for this week's 5% Challenge is to use 9-inch plates - this is an easy challenge for me, because I already use these 9-inch plates most of the time because they are my favorites

the ecru-colored plate with the sunflowers and bees on the border is Corelle - I picked up 4 of them about 10 years ago when Walmart still used to have real clearance prices; the pink floral is a "bowled dish" with sides that slant down slightly, it came with my husband as a singleton when we setup house - I love that dish and probably use it the most

emoticonthe second is that I want to go back to the fun things of my childhood - the things that kept me active and interested - to help vary my exercise - I've been wanting to try hooping for over a year, but never got around to buying the supplies to make a hoop - then I struck up a "hooping" conversation with a fellow Daisy BRIDGIEEE and discovered a great deal on a travel hoop (one that collapses into 6 segments) that was just too good to pass up - even though I'm not very good at it yet, I LOVE IT!

note: it was very windy this day, so I've got hooping action hair in a standing still pose

my daughter wanted to join in the fun, so we got her a kid's sized hoop

(please note - if you have tried those hoops from the big-box stores, and they don't work for you, it is because they are for kids, a hoop should come up to your waist or higher)

if you want more information on hooping, check out the Hula Hoop All-Stars Team www.sparkpeople.com/myspark/groups_i

or hooping.org www.hooping.org/

I've been wanting to try that myself, and think I might just make a hoop my reward for reaching 5%. I was pretty good at it as a kid.

I love your wind-blown look - you know that they pay big money for wind-machines for fashion photo shoots - so you got a bargain there!

It is so much fun to be able to do something fun and get good exercise at the same time. I used to have a hoola hoop when I was young & still do but it has only been used for photographic ventures in recent years....... Hm-m-m, maybe I should try it again...... emoticon

Believing In Yourself & Your Dreams

Tuesday, April 03, 2012

even when everyone tells you that you can't - if you believe in yourself, you can do anything

NPR had a great article this morning about Kathrine Switzer, the first woman to run the Boston Marathon - the pictures are great, and the included video is worth a watch (gave me goose bumps)

it took 5 years after she entered on the sly for women to be officially allowed to run the Boston Marathon

FUNGIRL81005 - I think some of the teams may do things differently, and I think you can read team descriptions in one of the threads on the team to get a feel for what each one is like

but basically:

there is a weekend challenge that runs from Friday through Monday, always with a different theme that also ties into the theme of the week

weigh-ins on Wednesday

a last chance workout (sometimes with a theme) on Tuesday

TNT (tighten and tone) on Thursday (I'm not sure every team does that)

plus there is various levels of chat and other participation and things to do based on what your team does

there is also a group wide challenge to get 20 mins of exercise a day at least 6 days a week (I think it is called a streak challenge)

I'm pretty sure they have an FAQ or about this challenge in one of the forums when you follow the link that might have some more details
