spaghetti squash rocks my socks!!! OMG dinner photos!

Thursday, May 05, 2011

OK SO we are trying new foods/ healthy dinners etc...this was one yummy success!

Spaghetti squash is an amazing food I realize now! Here is a recap of how to cook it/ how we ate it!

Bake at 350 degree's for 45-60 minutes until tender

cut in half/ remove seeds (toss them)/ and then use your fork to scrap out the "noodles!" AMAZING and simple!

I made it 2 ways to try last night...BOTH amazing!
This was some of the noodles some olive oil spray 2 cloves of garlic and some sprinkle parmesean cheese cooked in pan for 3-4 minutes until warm and coated

This is it covered with regular pasta sauce...AMAZING even my hubby agreed!

(not happy to be in a photo lol)

ALSO my 10 month old agrees it is YUMMY!

I plan on making an alfredo/ chicken/ broccoli dish later this week as well! AMAZING veggie :) thanks for reading

I tried spaghetti squash for the first time last fall and it one of my favorites!! I've never cooked it whole first though. I always cut it half and then bake it cut side down.

Your daughters are beautiful! I would suggest changing some things up. Once you get close to your goal it is harder to lose. Your body needs a change, something you could try is fluctuating your calorie intake between the high and low ranges.

    What beautiful daughters!

You seem to have hit a plateau, try to change up your exercise routine and push through. You CAN do it!

You did an AMAZING job! Congratulations!

GGMOM06 4/18/2011 11:41PM

emoticon reduce your calories by 500 a day(if you can) and increase your exercise by 500(burned) and you should drop that 10#. It did work for me,now i'm going through it again for the last 10#. emoticon

TRYing to kick this depression!

Sunday, April 03, 2011

Been super exhausted/ stressed/ overwhelmed! It makes sense I mean two kids SAHM by myslef most of the week...it caught up to me and my walls of steel crashed down all around me.

Keira is now 9 months still breastfeeding her...she is demanding...momma's girl. She is now 31 inches and 20 lbs! Liv is 2.5 and 34 lbs! :) and FINALLY we are doing great with potty training :)

So there is happy things in my life....BUT All I keep seeing is the negative! ugh TRYING so hard to turn that around! I went for a run friday (2.2 miles) welll walk/ jog :) BUT off my ass ;) ....and then yesterday I did .77 miles :) Today my double jogger stroller came so we plan on the track to give it a go :) HOPE I love it! the girls would benefit from some sunlight / exercise happy mommy as well :)

My weight is still the same around 170 so no increase there thank god! I have eaten badly recentally....BUT I think my iron is low I am weak/ sleepy/ joint pain/ and bruising like crazy! I am adding back red meat and whole eggs ( not just whites) and more spinach to see if it helps some.

Well that was this weeks rant / recap! Hope all is well with everyone :) Im getting there...

I agree depression does suck. Keep up the good work. Get out there and get some fresh air. It really does something to your mind and spirit. I find the walks in the park really help me clear my mind. Hang in there!

Depression sucks! I know that all too well. Getting outside is a great plan and adjusting your diet seems like a good place to start.

It's great to read that you are fighting your way past the negative spiral. It is hard and you can get through this. Keep blogging and getting that sunshine.

Enjoy the moments and Spark On :)
