Batch cooking extravaganza RESULTS!!!

I still need to mix the rice with the salad.

4. Chicken teriyaki with brown rice, green onions, broccoli, cawliflower and (NO) corn (I used it all in the salad above).

So my sneaky bf decided he really wanted to eat this for lunch instead of me saving it for my frozen meals. I decided to keep everything separeate because he does not like broccoli or cawliflower and I added some celery so he would have a veg. It tasted GREAT!

I decided to wait to make the biscuis until tomorrow, and I still have to make the pizzas tonight for dinner!

BATCH COOKING TOMORROW!!

Well I spent ALL night searching and planning the meals I am going to Batch Cook tomorrow.

I think I am going a bit over board BUT I am so excited! (After I write this quick blog I am heading to bed so I can wake up early to start my COOKING!!! emoticon)

Here is the break down of my batch cooking extravaganza!!!!

1 Chicken fingers breaded in Oat bran (loved this the first time I made it and it is perfect for my lunch on Wed and Thurs)


2. Carrot Fries (My nana made this last week at my parents house and apparently it was a hit. Now it is a must try and it will go perfect with my breaded chicken figners!!)

3. Spicy Rainbow Rice and Bean Salad (I got this from the OhSheGlows website....thanks to Fit Whit I go to this website for recipes!!!I am altering the recipe slightly since I do not have all of the ingredients but I am excited to eat this either way!)

4. Chicken teriyaki with brown rice, green onions, broccoli, cawliflower and corn. (This one I am adapting from a recipe I saw on www.asweatpeachef.com!)

5. Whole Wheat cottage cheese Biscuits (I thought this would go perfectly with the Butternut Squash, carrot, apple soup i made and froze from last week! the soup alone was missing something, i hope this is it!)

6. BBQ chicken pizza again (My bf and I start class tomorrow and I promised him I would make this pizza again before we head to class. Since our class is at 7pm, it would be an uber filling dinner. I'll pair this with a spinach salad)


I was also going to make lasagna roll ups with cottage cheese, spinach and ground beef. BUT i realized we have no marinara sauce or any ingredients to make marinara sauce and I have no money to buy any sauce right now. SO that will be for next week.


Depending how long this takes, and how tired I am heheh, I might chop up a bunch of veggies as well. I will need some vegetables for work Wed and thurs besides the carrot fries.


OH I also bought some caramel rice cakes today! AN ENTIRE PACK for 99 CENTS!!! These are only 60 calories and will give me jsut the right amount of sweet to go with a snack!

Wearing Jeans again, Non-diet Goals, My Plan for Today!

Friday Night my bf's mom bought costco jeans a size too small for her and asked if I wanted to see if they would fit me. Hesitantly I decided I would try them on.

Before I carry on, I think I need to give you all some background information with me and jeans. I HATE them. I have no worn a pair of jeans in over 2 years. I can never find jeans that fit, i don't know my size, and since I work with children I need jeans that COVER my butt. All the jeans that I seem to find always cut off at my hips and are not flattering what so ever. Back in highschool, the girls wore jeans that would show a bit TOO much (thong, butt crack etc.) and that is not my idea of attractive. To top it off I am between sizes and pants are either too tight or fall off. Needless to say Jeans are not my friend.

When my bf's mom gave me the pants to try on, again I was hesitant, but I did it. These are not "low rise" jeans, actually quite the opposite. These jeans sit just under my belly button. This is very different then any jeans I have tried on before. Granted, at first it was a bit weird, I found that these jeans were STRETCHY! Meaning I can bend, stretch, move etc. without ANY of the issues I had before. This also means I can go to work(daycare) with a pair of jeans now!

I was also told the size of the jeans, an 8. I think that is maybe 1/4 of the reason I did not want to try these pants on. I have been in a size 8 before, but I would always want to buy the size 6 that I have always been. When these pants fit so perfectly, I didn't care that the size wasn't the "ideal" size I want, I only cared that I feel GREAT in them.

Let me say it again.

I FEEL GREAT IN A PAIR OF SIZE 8 JEANS.




Earlier today I read a daily spark blog about setting non-diet goals. I have been thinking hard about this and I think I have come up with a few that I want to accomplish. I still need to make a plan to do this and put this plan into action, but step 1 is making the goals.

1. Batch Cooking. I know this seems like a diet goal, but it is not. By Batch Cooking I mean to be consistent cooking large meals in the kitchen. I love the high I get when I have 3 different meals being made at once. I need to remember this feeling when things become busy and overwhelming during my semester.

2. Re-organize my schedule (my homework schedule) every week. I know my Practicum and my homework load will be high. In the past, I would not re-organize my workload, I would forget what was due when, and things would be left to the last minute. This will help keep me on track.

3. Take photos for 30 minutes per week. (I did steal this from the spark blog, but I forgot how much I loved doing this in the past) These photos could be anything from my nature walks, my bf, my dogs, siblings, family, my batch cooking or even of me.


For now that is all I have, but I think those goals will be very attainable as long as I set up a plan for each of them.




One last thing to add to my blog. I woke up this morning and EXERCISED! Everyone else was still asleep, aside from my 2 dogs. So i decided to open up the SP Fitness tracker and do the strength training I had scheduled. This is usually difficult for me. The house I am living in is small, it is my bf's families house, and I do not feel comfortable exercising in front of them (especially when they are all reading their books like right now lol). The only other room I can exercise is the bf and my room. That give me a 2ft by 4ft space to work with, which is VERY difficult. Today I did it and that is all that matters!

I also have a 3km (starting small) walk scheduled today. The last time I went for a walk, my girlfriend came. She is coming again today. The weather is dreary looking, but there is no rain yet! SO SHE CANNOT COMPLAIN!!! If she does, I won't be inviting her out for walks anymore.

    Wow that is great about the jeans (I must admit I have jeans that are labeled a size zero and ones labeled a size 8 and both fit about the same, I think that vanity sizing is a huge one on the zeros).

Those are great goals you have as well. I love doing batch cooking and it helps when the kids are in charge of making dinner all they have to do is rewarm it.

Hope it doesn't rain on you while you are out walking.

Creative cooking experiment

I spent last night planning my meals for today and tomorrow for work. I followed the plan.....until dinner.

After work today, I came home with a creative urge to cook. So I started looking at the recipes I had and nothing was hitting the spot.

So..... I just started grabbing ingredients from the house that wanted to use and began to create. I ended up with an amazing sauce made from italian seasoned canned tomatoes that I pureed in a food processor, pureed carrots, pureed celery, pureed spinach (2 whopping cups!), 2 cans tomato soup, 1 can of beans, a few random seasoning/spices, and some flour to thicken the sauce. (it looked more like at soup at first)

I also cooked some extra lean ground beef and angel hair pasta at the same time. When the pasta was finished cooking, I separated the cooked pasta into containers that I could freeze, I let the sauce simmer, and finished cooking the meat. When the meat was cooked through I added 3/4 of it to the sauce and let it continue simmering.

With the rest of the meat I decided to make.....NACHOS....for dinner, and not the healthy kind either. Cheese, organic tortilla chips and extra lean ground beef EEK.

To top it off, I ate too much of it and felt bloated after dinner. I still feel bloated actually. I need to learn to stop when I am satisfied.

When the sauce was finished simmering, I separated it into the same containers as the angel hair pasta and stirred it together. It looks delicious. Even the bf (who hates carrots, and does not eat "healthy" foods that often) LOVED THE TASTE OF THE SAUCE! Woot for creative cooking.

Set out my clothes for tomorrow (trying to do this so my mornings are easier)

Batch Cooking

First I started off my morning with a very SHORT walk. My girlfriend complained every second of our walk that I became annoyed and suggested we stop. On a good note I did physically get out and walk today!


Now on to the Batch Cooking!

I decided to take on 3 different meals at once.

1. Butternut squash, carrot and apple soup (makes 8 servings)

2. chicken fingers breaded with oat bran

3. homemade bbq chicken pizza on homemade whole wheat crust


I decided to have pizza for lunch with the bf, save the chicken fingers and oat bran for the next two work day lunches (pairing it with rice and corn that i will make quick tonight), and Do SUPER SIZED Soup to freeze for the semester ahead.

So far success. I chopped my soup ingredients (squash, apples, carrots), added it to a large pot with vegetable broth and spices. I then put the chicken breasts in the microwave to defrost. While the soup was simmering, and the chicken breasts were defrosting, I prepared the dough for the pizza crust, and prepared the oat bran.

Next, the pizza crust had to rise for 10 minutes, so I cut up the chicken breasts, preheated the oven and began to cook half of the chicken breasts on the stove. (of course I kept returning to the soup for an occasional stir!)

Then I took the dough, flattened it onto the pan, brushed a small amount of oil onto it and cooked it in the over for 5 mintues.

Next I grated the cheese, stirred the soup, and added bbq sauce to the cooking chicken. All was going great!

Once the crust was slightly firm, I added pizza sauce, cheese and the cooked chicken to the pizza and placed it in the oven.

Next I breaded the chicken with oat bran and put it on a pan near the oven. Then I began cleaning the kitchen of the mess I caused. It looked like a tornado hit.

Next I pour the soup into the food processor to puree it. Once pureed it went back into the pot, milk was added and the soup simmered for another 10 minutes.

Once the pizza was finished, I let it cool and added the chicken fingers in the oven to bake for 30 minutes. I cut the pizza, cleaned the kitchen. The BF set the table for lunch.

The pizza was delicious!!! Next time I would cook the crust for 10 minutes and take it off the pan when I make the pizza next time.


Now I have 8 servings for school, lunch for the new few days, and I have my first official batch cook day.


By the way...I forgot to mention. This took only 1.5 hours of cooking, preparing etc.!

I will definately preplan another batch cooking day soon! Maybe next time I will take pictures to show everyone!!

  I'll be over for the soup and pizza soon...

Good job! I think batch cooking is the most important aspect of eating healthy as I tend to go for take out after a long, hard day when I'm tired and the will power is not so strong. It's great to have a fridge full of tasty possibilities.
