    Wow, that sounds lovely Lila! If I was to eat any meat it would probably be turkey... but I am not really missing it at all... I will have to try the eggplant idea :D

    I got lazy for a few years in there and would only make the lazy mans cabbage rolls, with the coleslaw mix and layering it with tomato sauce, rice and hamburger....
A wtoman after my own heart, trying lots of new recipes daily, yum,yum...

I made eggplant parmigiana the other day for the first time... I sprayed olive oil on sliced eggplant and broiled it, then I broke up a turkey burger into tiny pieces and mixed in cottage cheese, pureed tomatoes, spices, onions and mushrooms..... Wow! Even had it for breakfast the day after, YUM

    These were my first attempt in a very long time as well... i made a huge batch of them and froze them... took out four today for my lunch, they are not that big, but that was probably more than I could eat...

I love my life!! It was 300 Calories of pure HEALTHINESS!! My chocolate smoothie minus the cocoa with a half a cup of pitted dates [to give it a CARAMEL FLAVORING] added to it and about a cup of coffee instead of water... I ran out of milk so I figured I would through my coffee into my smoothie this morning... I may never turn back!!

For one... my coffee was the one thing I wasn't willing to shift on... one coffee per day, with one sugar and about a quarter of a cup of milk... I don't like sweetener in it, no compromising on this one... until today!! LOL

So the ingredients were two handfuls of spinach, maybe 3/4 cup of frozen banana slices, one cup of frozen watermelon chunks, 1/2 cup of pitted dates, 1 tsp vanilla, 1 cup of coffee black... and a bit more water until I got the right consistency... That makes roughly two servings... one I have for breakfast... the other I pour into my popsicle makers for snacks throughout the hot weather!

    @STARCROSSED29 - I was maybe a little skeptical too at first... but i will NEVER look back. I can't imagine having a smoothie now without the nutrient base of spinach... I can't taste it, I would certainly challenge you to try and see if you can taste it once you have added other ingredients. Its the first thing I add every day... everything else is optional!!

    I LOVE that texture of frozen spinach, it just scrunches up in your hand, and it does blend beautiful... although I do find you have let it blend for a couple of minutes, I don't mind larger chunks, but the longer you blend the finer the mixture/blend will become...

Now, I just used what I had in my cupboard, the pitted dates... I will be scouting about a bit now to restock and see whats available... the ones I had were from walmart, but I think there might have been an added sugar content to them. I am going to check out my local bulk foods store and see what they have... The dates you don't want to grind them up as finely as the spinach... the little bits act like butterscotch bits! so tasty!

    Wow, you freeze your baby spinach to add to smoothies. That sounds like a great idea. It adds extra coldness and probably makes it easier to blend up as I have tried blending fresh spinach without luck in the past.

Your smoothie sounds yummy. I love caramel and you are the second person to sub dates for a caramel flavor recently. Do you use a particular kind of dates?

    YES SPINACH!! Oh my goodness, I can't make a smoothie without spinach now! Why not have two cups of spinach for breakfast every morning and not even "taste" it... I keep a bag of spinach in the freezer now, so its all crispy... and scrunch it down into the smoothie then add all my other ingredients of the day... especially with cocoa and banana... i think it gives it a richness that it wouldnt have otherwise. So GOOD [for you!]

Being Accountable

So, I hope you don't mind me posting away all these photos of each meal... it seems to be an emerging pattern in my life... research, find recipe, alter/adjust until I get the healthy content I am seeking, prepare meal... then document it... Then... EAT IT, of course! :D

This is not only for the benefit of others, although I hope that it can! I think its primarily a way to be accountable to myself... To preserve the joy and the excitement that I am finding in this journey... to save ideas for those days when I may not be feeling as motivated...

Its also helping me prepare meals for "One"... with my son away, I can too easily not bother with feeding myself appropriately... but he is fourteen already and will be leaving home sooner rather than later... so its even more important to get into the habit of eating well, even if I am all by myself!!

And... I don't feel so alone sharing with you all! Thank you for that!

Only 400 Calories!! Less than half of a regular Eggs Benedict meal... at least half the cholesterol and almost a quarter of the fat content!! And... even despite the "green" color... it was DELICIOUS! Maybe not something I would have every day, but at least I can still have my "eggs benny" on special occasions! :D

I make myself a really healthy smoothie every morning... usually has at least two handfuls of spinach, an assortment of fruit I have sliced up and frozen previously [banana, melons, berries] and more often than not I will add two heaping tablespoons of COCOA! Yes, I love my chocolate...

I make enough for two servings, but my son is away just now visiting his dad, so I have been taking the extra portion and divvying it up into popsicle makers! They work out to about 25 calories a piece... I can eat them all day!! The ones with cocoa taste BETTER than fudgesicles!! The green one is a spinach/melon/lime combination. I have been experimenting with different flavors and even testing some out on the local kids that pop by my house each day... Their mom is delighted I have them eating spinach with such joy!! :D

Oh, and on REALLY hot days, I don't cook at all for dinner... I just make myself ANOTHER smoothie and make MORE popsicles!! yay!!

    @NEELIXNKES - I can't tell you how many banana's went to waste in this household before I started "eating properly"... now I am buying up the day olds in droves and chopping them up and freezing them trying to keep ahead of my "Smoothie Addiction"!! lol... I just crave them now... all that nutrition packed into such a small space!! My body has been starving for them for years! lol

I have chopped up watermelon in my freezer too... i often use a handful or so in my smoothies along with my other ingredients... Currently i have Cantelope, Honeydew, Red Papaya, Watermelon, Strawberry, Blueberry, Raspberry, Grapes, Banana, Baby Spinach... probably a few more... All chopped up and in the freezer ready to be added to my morning Smoothie! Every day its a little different!

    I really need to pull out my Popsicle molds. I was just looking at all of the bananas turning brown on my counter and thinking that I need to make some softserve with them this week. I have been experimenting with watermelon slushies lately. So refreshing on a hot day.

    just an added note... when using cocoa... be sure to include a bit of frozen banana in the smoothie... it seems to offset the "bitterness" of the cocoa best of all... but in its absence, I will sometimes add up to half a packet of Stevia until I get the right flavour...
