A quick Spinach, egg, and tomato sandwich on a whole wheat English muffin. Served with turkey sausage, an orange, strawberries, and homemade hibiscus tea. I love my sandwich maker! Makes mornings fast and easy.

Quick 15 minute Brown Rice Chicken and sausage Jambalaya from the pressure cooker served with mixed veggies. I added spinach and chard to it as well to up the veggies, fresh peppers, onion, and lots of fresh seasonings. Glad I don't need to bother my granny to make it anymore!

A quick snack I just made up and will be doing again! Egg salad and cucumbers. I was making a salad, but I was fixing up cucumbers for it and was like "these look like crackers". So, in the future I'll substitute crackers for cucumbers. Just another way for me to sneak in veggies.
