Ezekial bread, over easy egg and half a grapefruit. Salmon, chicpeas, evoo, celery, onion, peppers, old bay, brown mustard, apple cider vinegar, avocado, lime juice on ezekial toast. Big ol' bowl of popcorn topped with a little curry powder, salt and cayenne pepper only 84 calories and gluten free! Popcorn you are my friend (and my dinner). Thanks to you I can end the day with 2 calories to spare ❤️ Greek yogurt, honey, blackstrap molasses, cinnamon, blueberries and a smidge of mint for beautification! One of my go to snacks when I'm too busy to sit and eat. Sippable Protein, Fiber and Omega 3s! Was happy to have one of these on hand today. Another sippable solution to get me to my goals on this non-stop day. Jus 1 gram away from my fiber goal and in need of some protein. Perhaps a piece of fish and a veggie for dinner? Fell off the health wagon over the holiday. Getting back to tracking and swapping out the liquor for Kombucha. Plus I stocked up on my go to Amy's Soup to help satisfy my hunger while at work and avoid eating the Mac and Cheese we sell! It ain't easy!!! The very thing I've been fighting not to eat all day. Every time I pull it out to serve a customer I want a bite! Staying on track with dinner! Baked chicken, collard greens, baked potato and Greek yogurt instead of sour cream. One of my go to snacks to get me through another endless workday. This flavor has more sugar than usual. Dark chocolate mocha almond only has 5 grams of sugar. Must be the dried cherries... I usually check out the fiber content first. A lot of fiber keeps me from overeating. I usually choose tequila for that, but let's see if this works instead. Keep on tracking! Here's dinner. Dessert to follow. My pie chart is pretty balanced. Ate 28 grams of fiber today! Here's dessert! Was deliberating on buying Wendy's but decided to prepare myself dinner and dessert and save some money. Got my pie chart pretty close! And made my fiber goal. Here's dinner! Baked chicken, rice, sweet potato and Greek yogurt. Last meals of the day. Salad from my fave Greek spot, pan seared catfish made by yours truly and a little Greek yogurt with blackberries, molasses, honey and cinnamon for dessert! First meal of the day. Thank goodness I had one left. Work. Work. Work. Aaaaargh. 😂 Snack time! Hummus, Mary's gone crackers and some apple slices. Salad time! ❤️🥗 managed to exceed my fiber goal for the day too. Snack time! Didn't have time to prepare a meal from scratch. So I tried out a Dole Asian Salad in a bag, added some Bumble Bee Spicy Thai Chili seasoned Tuna and 1/4 of an Avocado. It's really good! I did the other half of the bag of salad with Sesame Ginger Tuna Wednesday. It's not the cheapest Tuna but it sure makes a yummy protein packed salad super easy! Needed to make my protein goal. Tuna, Greek yogurt, avocado, celery and onion. Greek yogurt with blueberries, strawberries, honey, cinnamon and pistachios. Yummy! Turned a can of Amy's Organic Curried Lentil Soup into a hearty meal by adding some boiled potatoes and baked shrimp from my job. I like to add a dollop of Greek yogurt to each bite too! I was luckily asked to join a 12 days of Fitsmas Facebook group. Each day we add to the previous days exercise. I've felt too busy and overwhelmed to workout for nearly a year, but with people egging me on and the routines being so short I've made it through day 9 and will be squeezing in Day 10 tonight! Baby steps. Snack time! Trying something new. Not bad! Texture is like cheetos only a bit more of a subtle flavor. Fell off the wagon this past week. Feeling stressed 😩. But today I'm back to tracking and trying not to overwork myself. I don't really have to do it I? Lol Been having sandwich cravings. Trying something new. BLT on gluten free bread. Next time I'll swap the mayo for avocado. Pretty tasty though! I always like to have a beverage during my IF. I don't starting eating until 2pm. First time having lemongrass herbal tea and it is really relish with a touch of honey. Mmmm. Gluten free turkey bacon BLT. Swapped the mayo for avocado today for some added fiber! Not gonna lie I ate healthy but I've been drinking tequila... Snack Time! Popcorn, Apple, Mixed Nuts and. Little Kombucha. Word to the wise an ounce (by weight) of mixed nuts fits perfectly into a 2oz soufflé cup! Stopped working to take the time to make my self 2 healthy tuna salads. 1 for now and one for tomorrow! Lettuce, tomato, onion, avocado, carrots, cucumber, kidney beans, Greek yogurt, a little brown mustard and hot sauce, fresh parsley, salt, pepper and some fresh squeezed lemon juice. Now time to chow down! Then back to work... Ok here is the meal that made my pie chart perfect! BAM. Look at that masterpiece! Lol. I didn't have too many healthy options here at work in the "Soul Food Kitchen" so I threw a lot of random remnants of my healthy stash together along with some stuff from here. Rice with Blackeyed Peas, kidney beans, fresh parsley, peppers and onions baked Tilapia and Shrimp with a dash of hot sauce. It was really good too! Making some turkey bacon for my bedtime BLT! Last meal of the evening. Avocado Turkey Bacon BLT surrounded by apple slices! Can't wait to get home and dig in ! GN fellow Sparkers and Happy Eating! Made myself a little spiced hot cocoa. Only 60 calories, plus protein and calcium. Trying to meet my calcium goal. Maybe a little too much cayenne this time. Lol. Love that almondmilk has more calcium than regular milk! Tired as I am, I still managed to whip up a little something. Griddled Tilapia (with no calorie cooking spray) and Turkey Bacon, Garlic and Herb Smashed Potatoes (made with almond milk and Greek yogurt). I think it actually has too much protein for 1 meal. 37 grams. Not a protein expert, but it sure tastes good! Not quite as exciting as yesterday's version which was smashed garlic, turkey bacon potatoes with grilled tilapia. I was too busy for the extra prep so I just threw everything in the oven and stole some collards from the steam table at work. Bon apetit! Trying a new snack food today. Figured cereal would motivate me to drink more almond milk so I can meet my calcium goal. It definitely takes a little getting used to if you usually do like cheerios or oat clusters. I tried to find one with the least added sugar. Definitely will be adding fruit to give it a touch more sweetness, but not bad in my opinion. Here's dinner. Even though I was exhausted from working a 16 hour day in 4 hours of sleep, I still managed to make a healthy meal. This time last year I'd have just eaten anything! Like those extra fries I made for a customer on accident. Well now they go in the garbage (mostly. Lol) Feels good to eat healthy! Jerk Chicken with Rice and Blackeyed Peas from my job plus my own personal addition of Avocado and a dollop of Greek Yogurt (great to tone down spicy stuff). My dinner plate is a little bigger than usual. Usually I like to eat a lot of smaller meals, but today was so busy I didn't get to eat my first meal until 7pm. I still managed to eat mindfully! Go me. At my favorite Greek spot. My server is adorable! Snack time. Gluten free coconut chia cereal with bananas, blueberries and almond milk. Made myself a gluten free tuna noodle casserole. First time making a tuna noodle casserole ever. Subbed avocado for mayo and amys organic porcini bisque for cream of mushroom soup. Ripped up some gluten free bread for the breadcrumbs. Could use a little tweaking. Maybe more soup next time. But not bad. Lettuce, green pepper, onion, celery, avocado, tomato, fresh parsley, rosemary and sage, egg and turkey bacon with homemade honey mustard yogurt dressing. Used whatever I had on hand. First time making this dressing. Can't wait to get home and chow down! Used the honey mustard yogurt dressing I made the other day as the finishing touch on this Salad. Quinoa, apple and cheddar salad with mixed nuts and a little fresh chopped sage and rosemary. I remembered this salad from an Atkins cookbook I had almost 15 years ago. Haven't made it since then. That recipe had wild rice but the Quinoa worked! The recipe shown here is for the dressing I found online. It's really good! Just refilled my infuser water bottle with some fresh cukes, lemons and a couple strawberries! That's how I make drinking water exciting. Catfish, Collards, Quinoa. Has a nice ring to it! Midnight snack. Apples, blueberries, honey, cinnamon and crushed mixed nuts. Posted a goal So glad when I made a giant salad for dinner last night I put some of the veggies aside. Just had to add some extras. Turkey bacon, hard boiled egg, avocado and a little homemade honey mustard yogurt dressing. Been trying to eat this for about 2 hours. Time to chow down! Mary's gone crackers (seaweed and black sesame) and a little smoked oyster yogurt dip. I know this is kind of a strange combo but I'm trying to focus on consuming more iron and B vitamins. Pretty sure I have a deficiency. Also I like it. Dinner and dessert! Got my macros pretty close today and made my fiber goal! Made my iron goal through food instead of a supplement (which I generally forget to take anyways). Missed my calcium today. I'll drink a little extra almond milk tomorrow I suppose. Good night all! Today I'm getting crazy with my popcorn 😜 Shook it up with some homemade honey mustard yogurt dressing some crushed mixed nuts a little Nutritional Yeast for an extra healthy boost. I'm eating it with a fork and I like it. Now I'm thinking popcorn could add a nice healthy crunch to my salads! 🤔 Trying a new addition to my fruit salad. First time eating aloe. Testing out ways to get more B vitamins among other things. I tasted the aloe alone and it's quite bitter. With the fruit salad and honey the bitter flavor is barely noticeable. I see a lot of drink recipes but I don't have a blender so I'm gonna have to experiment! Dinner and Dessert. Macros are a little off today but I still stayed within my calorie range. Not gonna feel bad about it. Had a long and hectic day at work and resisted temptation long enough to throw together all the healthiest stuff I had at the restaurant for dinner. As you can see I'm a little OCD about my weights and measures.
