(12 comments) Veggie pasta with black bean Sriracha sauce, scallions and roasted red peppers. 2 miles EZ Mexican no-meat Loaf with salsa, guacamole, corn and Tortilla chips. Tastes much better than it looks ☺️ (3 comments) Today's run was 1:2 speed intervals x 8 plus warm/cool. (2 comments) Quinoa, black beans and fire-roasted tomatoes with a side of Buffalo Cauliflower. 8 mile long run to end week 4 of marathon training. (2 comments) Cream of wheat with banana and walnuts. Lunch: Vegan Mac n Beans Dinner: black bean burritos with brown rice, tomatillo salsa, and guacamole. (1 comments) Breakfast: Muesli, banana, walnuts and unsweetened vanilla almond milk. (2 comments) Lunch: Black beans and brown rice extravaganza from Engine2diet.com CT: 1 mile warm up walk followed by 20 min on the Arc Trainer (aka death machine). Dinner: Spicy baked falafel wrap with spinach, tomatoes, hummus and Sriracha. Breakfast: muesli, banana, walnuts, and unsweetened vanilla almond milk. (2 comments) Lunch: (same as yesterday) Black bean and brown rice extravaganza with guacamole. Dinner: spicy baked falafel "burger" on whole wheat sandwich thin with tomato and onion. Side of pretzel thins and hummus. The usual breakfast: muesli, banana, walnuts and unsweetened vanilla almond milk. Lunch: black bean and brown rice extravaganza with guacamole. Note: I didn't care for the fake chicken but everything else was delicious! Breakfast: muesli, banana, walnuts, and unsweetened vanilla almond milk.
