"What kind of vegetables and how do you eat them I have a hard filling my quota."

I happen to love raw veggies and low calorie salad dressing as dip - my latest find in salad dressing is Pear Gargonzola Vinegarette (YUM!). So, I eat raw veggies and dip almost daily at lunchtime. This weekend, I prepared chicken stir fry with broccoli, carrots, cauliflower, snap peas, celery, mushrooms, and baby corn cobs - as well as eating raw veggies and dip at lunch.

Another way to get my veggies in is to prepare homemade soup in the crock pot with all my favorite veggies, some chicken or beef with chicken or beef boullion, and barley or rice. I cook it all day, and it's ready when I get home for dinner. One cup of cooked veggies = 2 servings. Eat two bowls of soup, and I've got 4 veggies in for the day!

And then there's the traditional chopped salad - lettuce and all my favorite veggies chopped up. I always include some craisins for a little sweet-tart taste! Enjoy.

Hey, thanks for the yoga encouragement, I'm still fairly new to it but I do enjoy it. It feels good to just focus on stretching and getting to know my body for an hour, without interruptions! How long have you been practicing yoga?

I didn't know about the Sprint triathlon in Naperville in August. I may have to consider that one! I read all the FAQ's online, and I like the fact that they only allow 4 people to enter the water at a time. I'm hearing horror stories about the swim part in the pool.
