My Program:
I am a vegetarian. As of Nov. 8, 2012, I also eat following a low carb program due to being prediabetic. After a few cycles of doing well, then goofing off (and finding out my doctor meant 20 carbs max per MEAL rather than serving), I am on track and losing weight again.

I grew up in Massachusetts and now live in North Carolina! I'm the proud mom of two great young adults, Ryan & Meghan. I married my wonderful husband Jim Aug. 2007. Ryan and his wife Beth live in NH.

    Hi (I say shyly because I somehow missed your response a whole MONTH ago and am embarrassed!)!
    Here is a recipe:
    Tofu Parmigiana serves 8 @ 7.5 g carb
    2 lb firm tofu, cut in 1/2" thick slices
    1 lb mozzarella cheese
    2 c Hunt's Meat or Mushroom "Homestyle" pasta sauce
    2 T oil
    grated Parmesan cheese (the cheap stuff is better for this use)

    Heat oven to 350º F. Sprinkle Parmesan on tofu, saute in oil until lightly browned. Layer tofu in baking dish with tomato sauce and mozzarella. Garnish with a bit more Parmesan cheese and bake 30 minutes.

    Oven-Fried Eggplant serves 4 @4.8 g carb
    1/2 c mayonnaise
    1 lb eggplant, sliced 1/2" thick
    cheap grated Parmesan cheese (actually, I use crushed pork rinds but given your vegetarian bent, you'll prefer the Parm!)
    Heat oven to 425ºF. Lightly grease a baking sheet. Smooth a thin layer of mayo on each side of the eggplant slices then sprinkle heavily with the Parm. Lay slices in a single layer on the baking sheet. Bake each side up 12 minutes.

    Cheesy Eggplant Casserole serves 6 @ 9.1 g carb
    1 recipe Oven-Fried Eggplant (above)
    1 1/4 c spaghetti sauce
    1/2 lb grated Mozzarella cheese
    1/3 c Parmesan cheese (the good stuff)
    In a greased casserole, layer half the eggplant, sauce, and Mozzarella, in order, twice. Sprinkle Parmesan on top. Bake at 350ºF for 20-25 minutes until bubbly.

    Mushroom Casserole serves 6 @ 4.4g carb
    12 oz fresh sliced mushrooms
    3 oz grated Swiss Cheese
    1/4 c chopped onion
    1/3 c cream
    2 eggs
    1/2 t tarragon
    4 T butter

    Heat oven to 325ºF. Grease casserole dish or ramekins. Saute mushrooms and onions in butter until soft. Add tarragon; cook 4 minutes more. Mix cream and eggs in bowl. Sprinkle cheese over dish bottom; cover with mushrooms; pour cream mixture over all. Bake 30 minutes. (note: this is too cheesy to be a quiche, and is absolutely fabulous!)
