I don't know anything about vegan cheeses or what they are made of. I assumed something like soy but I don't really know. Kroger has a section of things like that. Some celiac experts think that people like me should not eat dairy either. I used to be really lactose intolerance until I had desensitization therapy. I switched to almond milk from real milk but my doctor still wants me to have the yogurt which I hate. Cheese doesn't usually cause problems. Do the veggies lasagnas actually taste like lasagna with no pasta and cheese? I have never seen a recipe for one. I like sweet potatoes but I don't think I would like them with tomatoes. You are a lot more experimental and less picky than me. That really helps you. I don't eat tomatoes and tomato sauce is one of the nastiest products on the planet so I try to avoid it. We use to can our own and it was so much better and cleaner. My hubby and son might like lasagnas like that but tomatoes give my hubby heart burn all of a sudden and now that my son is gone I won't make something just for my hubby as it's too much work. There are rice pastas but I haven't tried them. I'm moving away from processed foods and don't want to get into all the gluten free stuff which is expensive and mostly not healthy - tons of sugar. People try a few and before you know it they are eating gluten free cookies and gluten free candy and it's just more junk food. I still have to follow the glycemic index due to my hypoglycemia so if I eat something with a high one i can eat so little it's not worth bothering with. I really want to focus on the fruits and veggies and some beans. I have to take enzymes when I eat them. I didn't really want my salad today either but it didn't look pretty like the salad on your blog either. It's amazing that after one day off plan I can get so out of whack. I ate the salad though and felt better. It bloated me but that could be from the G.I. issues I'm still having too. I love ice cream and it's one thing I cheat on. That and pizza. They make gluten free pizza and ice cream and sometimes I might have a little if I can find the no sugar added, reduced fat, reduced calorie kind. I haven't tried either of them yet. I'm still hoping to let go of wanting processed foods. I don't want the chemicals.

They do have purple heirloom potatoes. They are beautiful! I have never tasted them. I can't have potatoes as often as I like but I still try to find a way to have them once a week or so. I would be able to have them on my diet if it were not for the R.A. but the R.A. is usually in remission when I am on my diet 100% so maybe I can have them more often when I am finally gluten free, if that happens.

Speaking of which, my doctor has me charting my food and responses to it now to see if I have more problems than to just gluten. He thinks not but I thought so. Unfortunately it is looking like he may be right. I thought I was having problem with supplements and too much fiber at a time but I cheated yesterday and had some gluten that was really worth it to me and today I'm paying for it. Some things are really hard to give up for me. He is waiting patiently for me to grow up. LOL.

Having a garden is wonderful. There is always something ready every through the growing season and you can extend it like we do with hoops and floating ground cover and hot and cold frames. We have lots of fruit trees/bushes. The birds are eating the peaches right now though before they are even ripe!!! My hubby is getting peeved about it. They are the best peaches I've ever eaten. I have peppers to pick now. Banana peppers especially - I love them.
