Sunny's Vegan Journey

Hi! I'm Sunny and I'm a happy, healthy vegan. I became vegetarian in 2008 the day I saw a "Mercy for Animals" video on the abuses of factory farming. My continuing to rely on dairy and eggs led to a weight gain and high cholesterol. I became vegan in March 2009 when I received Rip Esselstyn's book, "The Engine 2 Diet." Other than the hassle of eating in certain restaurants and trying to explain my choice to some friends, I don't miss my old way of eating at all! I'm not suffering, I'm not deprived, and I've lost weight!

Hi Sunny. I'm thinking of going Vegan after reading Caldwell Esselstyn, Joel Fuhrman and the China Study. Just want to say thanks for your posts. This is a challenge and it's great to see someone else doing this.

I hope everything goes well with the new doctor. I have tried dinosaur lettuce and have gotten so used to other kind that I actually think I prefer it. Hard to believe! I didn't have the problem that most people had using kale in smoothies, making it the first ingredient from the start. emoticon

Thank you for the comments on my blog. I went out right away and took your advice on parsley, etc. I'm hoping you are doing better. I had heard about spinach and blocked iron. I need to check on kale to be sure that isn't a factor with that. I also have to be sure I am getting enough calcium with that. Thanks again! emoticon

You are the second person to recommend parsley to me in two days. I went out to Whole Foods today and bought two bunches of parsley, then noticed there were two different kinds. I think I got California parsley. Along with four giant mangos! Thank you for your comments on my blog.

Hi Sunny:

Just stopping by to say, "Hello" emoticon

The peanut butter tofu sounds great. emoticon I made an amazing gingerbread/spice loaf with spiced frosting last night. I want to blog about that and some other things later on today.

Tonight for dinner we'll be having a nice tofu scramble sun dried tomatoes, mushrooms, etc., with a side of potatoes.

I hope that you are having a wonderful day!

Much love,
Denise
