I have been so busy running around since about June that I haven’t really taken much time to visit my friends’ pages, let alone get on the computer! I’m not apologizing because I haven’t been able to ambulate like this in over 10 years! Woohoo! But I am sorry that it has been so long since I have visited your page!
I found this tidbit of information that I thought note worthy and thought I’d share it with you. Did you know that chickpeas help curb cholesterol? Participants who ate 1 cup of chickpeas 3 times a week for 12 weeks had lower cholesterol readings by 7/7 points on the average.
The reason is: Chickpeas are high in fiber and polyunsaturated fats, which help reduce total cholesterol. I particularly like hummus ‘my way’. I use 2 cans of drained chickpeas, 4 to 5 cloves garlic, 2 teaspoons of cumin, 1 tablespoon of soy sauce and 1 teaspoon of ground coriander. I reserve the liquid from one of the cans of chickpeas and dump the drained and rinsed chickpeas into the food processor with the garlic and turn it on. I add only enough of the reserved liquid to make the mixture move (I like mine thick like peanut butter so I can spread it on crackers or bread). While it is mixing I add the other ingredients and let it run until smooth and velvety. It’s the only way I like hummus. I love it spread thickly on homemade whole grain bread with tomatoes and lettuce and a bit of sweet relish. (Hint: spread both slices of bread for hummus sandwich and it won’t need and any mayo)
