My Goals:
I would like to stay motivated, and get back to my high school weight by my sons 4th b-day! I would also like to look more fit and fix problem areas!

My Program:
I am cutting down to portion size meals, calorie counting, not skipping breakfast or lunch anymore, making SOME healthier food choices, and getting AT LEAST 30 minutes of exercise when my little goes to bed.

I have tons of hobbies! I like drawing, painting, coloring (yes like a kid), gaming, listening to my favorite bands (Breaking Benjamin, 3 days grace, ect), and hanging out with family and close friends.

So...last night we had leftovers and I made more cream sauce and mixed in a whole bag of baby spinach (yes, leaves!) and mixed it in a little at a time with the plain and veggie pasta and some extra mushrooms. It always amazes me how spinach wilts and you can eat a whole bag (5 ounces) in a couple bites. Maybe you could try wilting spinach and mix it into a casserole. You hardly notice it then. Anyway, we like it quite a lot.

To shrink spinach down (wilt), just stir one handful of leaves at a time into some liquid.

I'm glad you liked the quinoa! I'm not a huge fan, but yes, it does take on any flavor profile and you can do a lot to it - make it with beans, veggies, fruit, etc. You can also put it on salads or in soups! I love grapefruit, but that is definitely an acquired taste. Maybe you want to add some brown sugar to it? Spinach is also very versatile, so it depends on how you cook it. I like it with mushrooms and tomatoes - speaking of which, I forgot to buy spinach at the store today :( That'll be the next shopping trip!

At least some of those will last a while? You won't have to buy quinoa or beans in the near future! When I was living by myself, I would spend about $50 a week on fresh fruits, veggies, and meats. But I'd say half that budget was meat alone since I spent the money on the organic, grass fed meats from Whole Foods.

That might be true because a lot of people say it, but I don't know if I necessarily agree with it (I'm just thinking of this now). If you were to buy frozen dinner meals, you're paying for each single serving, where as if you were to buy a bag of rice and veggies and meat, you're getting multiple servings out of what you buy.

Ok, that's probably not true. But it is healthier and it does taste better!
