I do think 1000 is too low. How tall are you? If dont eat enough your body will just burn off your precious muscle to survive. If I know how tall you are and your age and your weight I can give you a suggestion for calories.

PS: I just flipped thru your food journal. I dont know how well you are tracking but it appears you need to up the protein. I like to eat about 40% protein, 30-40% carbs and 20-30% fat. 2312 days ago
My first tip would be that NUTRITION is VERY VERY IMPORTANT! I eat pretty much all whole foods. If its not in its natural state when I cook it/pick it up, I dont eat it. I eat the same things pretty much every day but I like to keep it simple so I succeed. Also be sure you are eating the right amount of calories. Its best to find out how many you need to maintain your current weight and deduct 500, that will help you lose about a lb a week. If you add fitness to your plan aim to burn about another 500 cals a day and you should be losing about 2 lbs a week total. Simple math.
Keep it simple, thats how I got to where I am.
Be sure to do plenty of cardio, strength train and REST. Rest is VERY important.
I also drink over a GALLON of water a day! Its amazing how much slimmer I appear when well hydrated. If I ditch the water for a day I puff up-ick.
