Sara, I know it's hard sometimes to stick to eating healthy, but just envision how much better you feel when you work hard toward your goal and achieve it! For me the exercising part was always the hardest, but I started exercising a year ago and committed to sticking to it. I have been so sick the last few weeks that I haven't been able to exercise (usually I exercise even when sick), so I worry that it will be hard to get back into it once I'm better.
Some advice that might help you: Continue to look at your rules and keep them at the top of your mind. Think of how good you'll feel when you accomplish what you set out to do! That should help drive it :) Also, some thoughtful reflection as to why you're having a hard time might help you come up with some solutions, or might help you see some excuses you are telling yourself that you can debunk and not allow yourself to use.
I noticed that you said on your page that the portions you have are way too big because you only have 2 people eating the meals. Have you considered looking at the recipe's suggested portions and the calorie amounts for those portions (trying to keep them under 500 for an entire meal), and sticking to that? Then whatever is left over you can either freeze or just put back in the fridge and eat the next day for lunch or dinner.
