Hi, my name is Heather. I have 100 pounds to lose and laughs along the way. Not only am I a religion and philosophy fiend, I am an avid livejournal person
I would like to be less worried and be a good friend to those who need a good friend. I want to lose 114 pounds and be really super cute on Wrightsville Beach either this summer or next summer. I want to be the best possible wife for my Peanut Butter and I would like to have enough.
When in Wilmington, I am doing Cardio pretty much 3x a week at the gym, and while I am in Atkinson, I have been doing a lot of walking with my Ipod of Happiness. (I heart music!) In addition to this, I am trying to eat a LOT more veggies and fruits compared to my meat and potato intake. Water's never been a problem with me, but I still have the occasional Coca-Cola.

I love independent films, don't get to see a lot of them, but I do love them. I loved The Science of Sleep and Koyaanisqatsi, Run Lola Run, and Amelie.

Hey! Thanks for the comments. I totally didn't realize that I could get blog comments, and I just discovered them today.
I am really excited about my new job. I even have my own office! I feel really blessed, and so pleased that all my hard work finally seemed to pay off. Plus, I'll be completely honest, I HATED working at MDA. I really didn't like the work, but I tried my best (which was clearly not good enough) and so I am thrilled to be out of there. (I do miss the company though, I work with a bunch of PhD's, who are nice but way out of my league!)

i saw this recipe on a message board, and thought of you.
"Almost No Fat Incredible General Tso's Chicken
1 lb skinless boneless chicken breasts
6 egg whites, slightly beaten
1 teaspoon cornstarch
3 cups unseasoned bread crumbs
3 tablespoons sesame seeds
1 teaspoon salt
1 teaspoon vegetable oil
2 tablespoons fresh minced garlic
1 cup minced white onion
1 teaspoon soy sauce
3 cups orange marmalade
1 tablespoon seasoned rice vinegar
1 pound fresh bean sprouts, rinsed and drained
1 bunch scallions, chopped
Rinse and drain chicken. Cut into bite-size chunks. Stir together the egg whites and the corn starch and mix in the chicken pieces. Mix together the bread crumbs with the salt and sesame. Dredge the chicken pieces in the crumbs to coat well and arrange so they are not touching on a nonstick baking sheet, sprayed with cooking spray. Bake in Preheated 350 degree F oven until browned and chicken is done, about 20 minutes.
Heat the oil in non stick skillet or wok over medium high heat and stir in garlic and onion. Stir fry until brown, reduce heat and stir in soy sauce, marmalade and vinegar. Stir until mixture begins to bubble and simmer. Stir in chicken to glaze pieces well but be gentle so crust stays on chicken. Arrange chicken over bed of sprouts arranged on serving platter. Sprinkle with scallions.
