Health and Happiness

It has been over two years ago, that I began this wonderful Spark adventure. I have successfully lost sixty pounds and as of the beginning of September 2011, I have been in maintenance for one year. Today, I switched my tricker to a maintenance ticker. I can say this new me is real. The way I eat, the way I think, the way I exercise and the way I look, have all changed. I am delighted! I really love the transformation!

Thanks for linking the article about beans. I agree with much of it, except the author I think has some misconceptions about ketosis. I have never had any of the negative side effects he describes and don't know anyone who is eating low-carb for life who has either. I suspect they only occur in people who eat what I would call low-carb junk food, Atkins bars and the like, not people who eat natural low-carb foods.

Thanks for the bean info. I tried searching for material that would support your statements. if you have a reference, could you add it to the wikipedia page for canning. It's section on nutritional value actually makes it sound like canning is a *good* thing ("makes dietary fiber more soluble"). Here's the page:

One more question if you don't mind: The instructions you recommend for cooking say "Allow them to set on the burner for two hours." I bet you those instructions are for gas burners, yes? I have an electric range and if I leave a pot on the burner, it will continue to boil for at least 15 minutes after turning the range off. Do you have instructions for cooking beans on an electric range? (A URL is fine.) Oddly enough, I couldn't find any myself -although I did find instructions for cooking beans in a microwave - what's your opinion on that?
