My Vegetarian Low Carb Journey
My daughter became a vegetarian about three years ago at age 14. Her grandparents were worried about her getting enough protein in her diet so I figured that if I became a vegetarian I would be preparing her meals and then I would know for sure that she was eating right. I also thought that it would be a good way to lose the weight that I had been steadily gaining for years. Unfortunately it didn't work that way and I continued gaining until I was at my top weight of 233. I was out of control ...

Her grandparents were worried about her getting enough protein in her diet so I figured that if I became a vegetarian I would be preparing her meals and then I would know for sure that she was eating right. I also thought that it would be a good way to lose the weight that I had been steadily gaining for years. Unfortunately it didn't work that way and I continued gaining until I was at my top weight of 233. I was out of control with my eating habits and craving junk food all the time. Finally in March 2011 not knowing what else to do I decided to try eating low carb but still remain a vegetarian and see if that helped. I didn't know how I would do that so I searched the internet for ideas, recipes etc. There isn't a whole lot of information out there but I did find out about a book by Rose Elliot The Vegetarian Low Carb Diet and I also use the Atkins book. My weight in December 2011 was 164 pounds. Since March 2011 when I first started this way of eating I have lost 69 pounds and I am continuing to lose.

My Goals:

My Program:
I have been eating as a Low Carb Vegetarian since March 2011. I stay away from rice, flour, pasta, sugar and most fruits and grains. I eat plenty of nuts, seeds, veggies, some dairy and will have eggs now and then. I no longer drink diet soda, my only beverage is water. I keep a 20oz water bottle with me and drink 5+/day. Since I have started eating this way I no longer have cravings for junk food, I'm not hungry all the time. I eat 3 meals plus 2 snacks every day. I eat mostly whole foods, keep sodium intake low and have at least 25g of fiber each day. Basically a 60-30-10 ratio of fat/protein/carbs but most of the time I eat more carbs then that. I enjoy trying new foods and recipes and have never eaten more fruit and veggies then I have since starting this way of eating.
