Trying out SparkCoach!!! Looks GREAT!!

Howdy! I'm starting over with Sparkpeople I am reading The Spark & beginning again with a clean slate. :-D

Originally,my doctor's dietitian, Donna gave me the info & suggested I use Sparkpeoples food tracker to help me loose weight and get back in shape. I am amazed @ all of the different parts that Spark People has to offer!! So grateful to Donna @ the doc's now :)

Now, I am on a new journey of learning how to ...

I grew up south of Atlanta but now live further south in GA. I spent years working as a firefighter/paramedic until injured on a fire scene by an out of control fire hose.

My favorite radio station in is 88.5 the Truth, a Christian station.
I enjoy movies and I am an avid reader of almost always christian fiction, my favorite is suspenseful romance.

I just wanted to say hi and tell you that even though I've been away from SP for the past several months (bogged down with work and stress) I am looking forward to ending the mighty-year-of-challenges that has plagued me this past year and start fresh soon... I may be still a bit scarce around here for the next little while but I did want to let you know that I've been thinking of you and hope you are doing well in life, in happiness, and in your journey.

Thanks for adding me as a pal!

In terms of gluten free, here are some of the brands I use:

Bob's Red Mill carries a lot of stuff, including but not limited to: chocolate cake, pancake mix, pizza dough.

Pamela's brand has a good pancake and bread mix--you can use it for either or, which is really convenient.

I eat quinoa for my "rice" as I am also diabetic, and it has a lower glycemic index-hence a lower blood glucose spike for me. It tastes good, too!

I collected all the flours to try to home bake recipes, but the recipes differ so much! I have a lot of flour that I can't use depending on the recipes, so I just started to use Pamela's pancake/bread mix. I even used it as "flour" in the gravy I made yesterday, and it was delicious.

I am now examing using the "flour" with egg and spices, so I can bake things in the oven, like fresh mushrooms, mozarella pieces, etc.

I like to live as much as a "normal" life as possible, and that includes my food, too! I just make modifications. I have been losing weight since I've been baking more at home, as I know what is going in it, and I can accurately count the calories.

I also got seaweed noodles and use them as a sesame noodle dish, but I just lightly coat the noodles with the sauce and then drain, or it takes up too much of the sauce. I have to remember to rinse them thoroughly before using or they don't taste good.

I get most of these items through Amazon.com, but Drugstore.com has started carrying a lot of gluten free products which are really good. They give you free shipping if you spend more than 25$. I have found gluten free crackers there, including saltines, and they also have KIND breakfast bars which are gluten free & delish.

I think those are all the hints I can think of so enjoy the gluten free lifestyle!
