Continuing on the journey ...

Well - I'm kissing my 50th birthday and am halfway to my original goal. It's been an incredible journey and will continue to be one for the next year. I've learned a lot about weight loss, exercise, my own efforts to sabotage, needing to take breaks, and how to reward myself with things that do NOT involve food. I'm fine with my progress. . . and looking forward to what I'll be able to accomplish towards my weight loss goals over the course of the next year.

This is what I wrote ...

This is what I wrote last year when I started using SP --- I recently celebrated my 49th birthday and decided that it's time .... time to shed this weight - before I turn 50. So here I am ... motivated and hoping I can sustain it this time .... I've had so many false starts, but I'm going to try my best to stay with it!)

Rather than a blog, I figured I'd just come mention what we've made here, since it's only a handful (7 recipes, including tonight's):

- Spinach-stuffed chicken with cheese sauce
- Mama's Red Beans and Rice (I think we modified this one a certain degree)
- Braised Mexican Beef with Crispy Corn Tortialls
- Ratatouille with Whole Wheat Pasta (we grilled some chicken to add to this, though my vegetarian siblings ate it without it, and loved it)
- Quinoa with Pea Pods and Peppers (as a side dish)
- a modified version of Roasted Root Vegetables (we used carrots, onions, and rutabaga, rather than what the recipe called for)
- Black Bean and Corn Salad (as a side dish)

This last one was the one we made tonight, and it's the first one that hasn't come out perfectly. It needed a bit of salt, and called for too much lime. It was still good, but we'll change a few things around the next time we make it. The next recipe I'm looking forward to making is the vegetarian curry.

Which ones have you tried? Which ones didn't turn out well?
