Sue- the crab quiche was good, but someone on our 100 Days' team talked about baking spinach, feta cheese and egg. I have made it several times and delicious at 82 calories:
Spray small ramekin dish
Shred spinach to 1/3 of dish
Feta cheese, 2 t.
Whisk one egg with a little milk and I add Emeril's seasoning.
Bake 375 for 15 minutes.
I made two this morning. I had one for breakfast on bed of spinach and cantalope. Yummy! emoticon
