I'm so far behind in catching up on comments on my blogs!!! My fun recipe that I make once a week is from the menu plan. You take a skillet, put just enough oil to cover the bottom, and pour in two/three chopped garlic cloves. Then you line the bottom with chopped tomato (about half of a good sized one) and spinach. Move to simmer and cover for 10 minutes. Then you serve over a half cup of spaghetti with a chicken breast. Yummy!!! I usually have with an apple and asparagus.
