I think you are right. I looked it up on the internet but it was all very complicated with the various types of protein that I gave up and just accepted that it was "good for you" ! And it seems very wasteful to throw it away as I would never throw away buttermilk for instance. In fact they sell that in Sainsbury's. Today my jar went wrong - all whey and grain and crusty curd so I strained it off - put the result in the bread which worked well - and washed the cauliflower grains and have started again. today I had a very veggie soup for lunch which was chicken broth and lots of different but not starchy veg in it and I used the whey from the kefir in that and it was delicious - just added that little bit of sharpness which a squeeze of lemon might have done. Now I am about to try making a sourdough loaf of bread. The sourdough is bubbling away so wish me luck!
yes, I'm still enjoying the kefir and take a look at the photos I put up on my page of yesterday's lot. Mine would probably do what yours did if I left it for more than 24 hours as it gallops along and even after four or five hours, the grains have got covered in the kefir and float on the top. This mornng I had the good idea of shaking up the pot; pouring it through a seive; shaking the sieve energetically over a big bowl so that after the thin liquid the thicker stuff comes through; then pouring the stirred up liquid through the grains again. I did this about three times and each time the grains got more and more like bits of cauliflower florets and the liquid got creamier. Then I poured it over my cereal and grated apple and banana.
