Hi Mary-- To answer your Qs about the MexiCali Chicken Stew, I have used both smoked and sweet (Hungarian) paprika for this recipe depending on the guests eating it. The smoked is awesome, but as it sets in the refrigerator the flavor deepens (a little too much for some tastes). I use the smoked when I am not expecting leftovers. When I use the Hungarian paprika--I put some smoked paprika on demand as I serve it--this way the pot doesn't "deepen" too much. Using fresh chicken-- I cover the chicken with water and boil it; then shred it in chunks with 2 forks & toss the water in the pot. You can sautee chunks before the peppers and then add a cup or so of water or chicken broth. Vegan versions using additional beans and chick peas in lieu of chicken have proved tasty too.

You know Mar, Lucy Lou is such a trooper. She seems to be doing fine with the "schlepping" back and forth. I think she gets a lot of lovin' over at her other home, and she definitely gets tons with me. So it is all good. Next week she will be all mine. No more driving in that traffic to get her for a few days....It will be good for her to stay in one place and be settled.
