    Hi Mary! Thanks for your comments on my posts, I figured I'd give you a little information about Jamaican Rice & Peas:

    Until we went to Jamaica, I had never heard of red peas either. They look exactly like kidney beans, just a little smaller. I have used kidney beans in the past when I didn't have the proper peas, and the flavour is almost exactly the same.

    There are so many different kind of peas and beans in Jamaica - and lots of different kinds of yams, fruits, and other vegetables too. There is food that grows there you don't find anywhere else on the planet. It's like heaven!!

    The rice & peas has coconut milk in the liquid as it cooks, and it is flavoured with thyme as well. Sooooo yummy. Each time I make it, I get a little closer to the taste when my Jamaican friends make it....it's a learning experience!

    Hi Mary! Me again!! I just saw your inquiry about greek ribs...

    We use pork ribs (any cut of ribs works), and then season them with oregano, garlic powder, and seasoned salt. With these spices, marinate overnight or a few hours. We bake them in the oven, and when we bake them, sprinkle lemon juice over the whole thing so there is a little in the bottom of the pan (a little water in the bottom of the pan too). Cover with foil and bake... soooo good!

    You are so right about my hubby being like yours & making me feel so appreciated and loved. We are so lucky!! Without him I would have never made it through some of the more difficult things I've experienced...it's so much help to know you have someone in your corner cheering you on. It gives me strength I never even knew I had.
