On a Journey to Maintain a Normal Weight

I have diabetes and my blood sugar is now 6.1. I have been a vegan for 6 months and found I cannot eat soy. After a year of losing 50 pounds I am now at 120 pounds which is my ideal weight. I worked up to a work out at a gym on average 6 days a week. It is tough for me to not lose and not gain.

Thank you for time to respond and for your suggestions. I do eat most all vegetables and have for a long time. Turnip greens are one of my most favorites. Bok choy is one of those that a very high vitamin K and I stay away from it. I always forget about fruit on greens.
It try to eat beans/lentils 3 times a day but always get it in 2 times a day. Please share your recipe for black bean hummus and a lentil spread. Do eat this with vegetables?
