Creating a New and Improved Me

I want to be healthier, more energetic, more attractive, just plain happier... isn't that what life is all about?
I'm 52 years old, married for almost 20 years, dealing with some health issues (hypertension, osteoarthritis, stroke, and more) for the past 10 years or so. My husband and I care for my 92-year-old father, 2 dogs, and 4 cats... my husband's kids are grown and care for themselves (mostly).
I volunteer between 30 and 80 hours per week as a Theatrical Costume Designer and ...

I'm 52 years old, married for almost 20 years, dealing with some health issues (hypertension, osteoarthritis, stroke, and more) for the past 10 years or so. My husband and I care for my 92-year-old father, 2 dogs, and 4 cats... my husband's kids are grown and care for themselves (mostly).
I volunteer between 30 and 80 hours per week as a Theatrical Costume Designer and Builder. I also enjoy writing how-to articles, making marionettes and dolls, cooking, and doing home renovations.
I would describe myself as bold and creative, a risk taker, adventurous, a foodie, conservative in my own life yet liberal in my attitude towards others, outgoing but at the same time socially shy.

My Goals:
I've lost over 40 pounds this past year, most of it by following the WW program. I want to lose 80+ more. I'm not looking for a quick fix, but rather I want to continue to make healthier choices and develop better habits.

My Program:
Official Start date of phase 2: January 1 2012.
I want to eat healthier - less meat, less processed foods, more vegetables.
I want to eat a satisfying amount of food, and so I will - 3 meals and 3 snacks daily, or at least most days.
I like to cycle my caloric intake, eating more 2 days per week and a bit less on other days. Some say it helps the metabolism stay healthy and avoid diet plateaus. I like to allow myself a day or two when I can enjoy eating out without guilt.
I want to lose weight slowing over the next 2 years. My doctor likes that idea too.
I don't exercise, but I have a treadmill and weight set... it's just a matter of setting up the home gym in our garage. Renovations here are always slow.

Personal Information:
I live in Sarnia, Ontario, Canada - in sight of Port Huron, Michigan. I enjoy shopping both sides of the border!

Other Information:
Many years ago a friend introduced me to the work of Edgar Cayce, psychic and 'Father of Holistic Medicine'. There is a lot of spiritual study connected with Cayce and his psychic readings. I can relate to the psychic part, but not the spiritual. I do however believe there is a lot of wisdom to be found in the dietary advice he offered. I would like to spend more time studying his recommendations and incorporate them into my life. It's worth checking it out - search 'Edgar Cayce diet'.
