I too hoped to be able to eat intuitively and not keep tracking for life, then I figured, "why not?" It works and after all these years it is pretty easy.
I also struggled for awhile with being accurate until I realized I'd never be 100% accurate and that's OK. Like you 'll I select something that seems close and generally pick calories in the middle of the range or what I think they are. I do subtract exercise calories but not all of them. What I figure is that if I am maintaining and my weight is staying the same, then my counts are accurate. If I gain then I've probably underestimated calories in and/or cals out. for me, this isn't a science; just one tool.
