Hi Lee, thanks for the comment on my blog and for the encouragement! I know you asked for the recipes for the taco meat I was gonna make, but I don't want to make this comment ungodly long with lists of ingredients so I'll just leave the links to the sites I found the recipes on.
I haven't made the taco seasoning yet, but this is the recipe I intend to follow: http://www.rachelcooks.com/2011/10/28/home made-taco-seasoning/ I think it sounds right based on experiences I've had playing around with spices. If it doesn't look like the sauce is clinging to the meat then I'll probably add about a teaspoon of corn starch. Mine will not include the red pepper flakes because I don't care for spicy taco mix.
And for my guacamole, it's actually a tweaked version of the Chipotle recipe, which I actually have made before. You can find that here: http://chipotle.com/guac-recipe Last time I made this I left out the jalapeno and added way too much red onion by accident. The cilantro and lime juice seems to be what makes it flavorful enough to add less salt, at least for me.
