Helloooo brand new life...!

I'm Laura.

I used to be chubby slothy slob, but one day in late 2011 I decided that I wasn't going to live like that anymore. I got more active, I paid more attention to my food. I ended up losing 30lbs, but I'm steadily seeing the scale creep up as I put on more muscle. So I'm not getting on the scale anymore.

What keeps me going on this journey is variety and self-experimentation. This time last year I was counting calories and running 6-7 miles. Now I'm eating ...

Hey so I read a post you left on KENLIGRACE's page about making zoodles - I've only used a hand peeler to make them. I don't have a mandolin slicer -- is that what you are using to make them? The hand peeling takes longer than 30 seconds for sure!

Ohh. I saw the post about the GEFU thing -- might have to order one of those!

Oh, I hope your mud run went well today. Even though you mentioned you were in a group of strangers I bet you had a blast and I hope the walls didn't bother you too much. In the Army we used to have to use the buddy system to help certain people over the high walls whether due to physical limitations or mental ones, like being scared of heights. Enjoy the rest of your weekend. I can't wait to read your next blog. :)

Hi. I just wanted to say thank you for telling me about zoodles in your blogs and then taking the time to write me and inform me even further. My Gefu Spirellini arrived today from Amazon. I was kayaking all day and then went to a movie and then the gym and so got back late. Even so, I was excited to try the zoodles out. I ran a whole zuchini through on the side that makes the thick zoodle and tossed them in a wok with olive oil and garlic for about 5 minutes with salt and pepper. OMG! Delicious! I cant wait to try them with some meat and sauce. WIN! Thanks again. emoticon

Hey, thanks for giving me the skinny on Zoodles. I actually ordered one on Amazon this morning. I spent way too much I guess but it will be here in the morning. I got the GEFU Spirelli Spiral Cutter for $22 including overnight delivery. Your blogs really got me reading this morning about Zoodles, Whole30, EatWild, and well, just your blogs in general. You write wonderfully and I quickly subscribed to your blogs. :) I look forward to watching the outcome. Things are looking awesome so far for sure.

Your journey is very inspirational to me. Thanks for posting such detailed experiences on the Whole30. Do you make Zoodles yourself or are you lucky enough to buy them at a local health food store. I'm interested in trying them but cant find much on the how to's. Thank you. Keep being awesome. :)
