Here we go again ..

I'm 35 years old and just about 35 lbs over wieght, yuck! My awesome friend Shelly has agreed to be my weight loss buddy and help me shed the weight. I really want to be comfortable in my body again, and I really want to be a good example for my children. Especially my daughter. So here I am, and here I will be during this life change. Good luck!

Hi Laurie, I apologize for my tardiness responding to your question about using eggplant for a pizza crust. It's easy and a good alternative to the higher calorie bread crust. First peel the eggplant, cut into slices aproximately 1/4 - 1/2 inch thick, salt slices for a 1/2 hr placing them on paper towels to soak up the moisture they will give up. Rinse and lay them on dry toweling. Wait for 10 mins to dry them. I grill them by brushing them with olive oil first. Flip when they have had enough time to aquire grill marks. Grill both sides. Remove from the grill to apply sauce and toppings , being careful to not overload! Place back on the grill, i use an upper shelf, indirect heat is what you want to melt the cheese. Squash can also be used by following the same directions. eNJOY!
