    Hi Laurie, I apologize for my tardiness responding to your question about using eggplant for a pizza crust. It's easy and a good alternative to the higher calorie bread crust. First peel the eggplant, cut into slices aproximately 1/4 - 1/2 inch thick, salt slices for a 1/2 hr placing them on paper towels to soak up the moisture they will give up. Rinse and lay them on dry toweling. Wait for 10 mins to dry them. I grill them by brushing them with olive oil first. Flip when they have had enough time to aquire grill marks. Grill both sides. Remove from the grill to apply sauce and toppings , being careful to not overload! Place back on the grill, i use an upper shelf, indirect heat is what you want to melt the cheese. Squash can also be used by following the same directions. eNJOY!
