I'm Jen. I live in Texas, but am not your "typical" Texas chick. I do NOT have big hair or a ranch or a horse (although I've always wanted a pony). I do not listen to country music, drive a pick-up or say "Yee-haw!"
I am a Christian (non-denominational). I love animals. I have been married for 17 years and have no children (we have 4 dogs and 3 cats). My husband is a corporate trainer, a personal chef, and is very active in the ministry. He will likely become a pastor someday.
I taught school for 10 years (elementary and middle school math) and now work for a testing company. I travel often for my job, so learning to eat healthy at restaurants and maintaining an exercise routine while away from home are challenges. I volunteer at a center that provides group support for children that have experienced a death-loss in their lives. I volunteer on the night where the kids have had a death by suicide, since my dad committed murder/suicide in 1998. In my spare time (HA!) I knit. I learned to knit in October 2006. My Chihuahuas are sporting some of my knitting.
I had gastric bypass surgery on October 22, 2007. This was definitely a tool to help me reach my goals. Depending on the day, I've lost between 90 - 100 pounds and have continued to keep it off.
For a while, I struggled with exercise. In April 2011, I joined the Alamo City Rollergirls, a roller derby league in San Antonio, and have never been more motivated to exercise. I usually skate a minimum of 4 times a week. If you're looking to really challenge yourself in workouts and take it up a notch, I highly recommend you find a league in your area.
On Sep. 7, 2011, I was diagnosed with DCIS, Ductal Carcinoma In Situ, or "Stage 0" breast cancer. On Nov. 8, I will have a bilateral mastectomy with reconstruction and be off my skates for about a month or so. I'm hoping to be back and even better than ever before our first bout in February.

I am also insulin resistant, gluten/wheat intolerant, I have IBS so I don't eat beef or pork. I have symptoms of fibromyalgia, but not officially diagnosed.
