This Is For Me

I was recently diagnosed with diabetes and was completely devastated by it. I have since then gathered my thoughts and realized that I have a second chance and I'm not going to squander that. I need to lose weight and become overall healthier. I have chosen to follow the Paleo Plan instead of the normal "diabetic plan". I am always interested in sharing recipes that follow this plan. In one month, I already feel better and have lost some weight.

My Goals:
My short term goal (3 months) to lose 20 pounds. My long term goal (by next december) to lose a total of 76 pounds and wear a size 16 comfortably, to be off at least 3 of my medications - including the insulin.

My Program:
I am following a low carb diet plan called the Paleo Plan. I have modified it to a very small degree and try very hard to follow it as it's laid out. The basics: No dairy (unpasteurized cheese in small amounts is allowed) no grains, no corn, no gluten, nothing processed (meats are minimally processed). I live in Independence, Missouri having moved here 4 years ago from Indiana. I work part time as an In house Care Giver, am married with one grown up wonderful Daughter who lives about 30 minutes from me.

I know I stopped eating bread weeks ago, and no pasta, no real sugar, no rice, no cereals. Eat lots of veggies in salads, and low carb everything and have only lost 2 pounds. Now I am stuff and constipated lol
