I'm originally from Oregon, but I've been living in Spain for the past nine years. I teach English and Spanish at a community center, work part-time as an English instructor at the local University and I am finishing up my PhD in Anthropology. I'm also happily married to the best possible husband.

Other Information:
Interests: languages, yoga, hiking, cooking, peace education, intercultural education, organic gardening, travel, just to name a few.

Thanks for reading my blog on my diet. I would absolutely LOVE to get your healthy, authentic spanish recipes to add to my list. As I have started listing my recipes, I am overwhelmed by how many healthy and delicious meals I can make. I have 60 so far and I haven't even gotten to Spanish cuisine yet, so I definitely have about 3 months worth, woohoo!
