Doing it all over again, this time-for the last time!

I am a SUGARHOLIC

It may not be a medical term, but mentally, emotionally and physiologically it effects every aspect of my being. To make this the final time I need to restart down this path (again) I am going to take the steps, one at a time, to build a healthier and happier life for myself and those around me.

This pity party for one is OVER and I will no longer drown my spirit in food and sugar.

I just grate them using a hand grater...no need to boil them...they cook pretty fast. But I do get them pretty fresh down here...I pick them out of the field...I do know the ones I used to get in MI were harder to peel and slice so if you notice that they are burning before they are softening you might want to try lightly boiling them before grating them or just covering them and cooking them on low to medium heat for 10-15 minutes with a little bit a liquid (2 tbsp of broth or water) just to soften them before frying them.

Sweet potato hash is so easy to make...I love to season mine with chili powder and cumin...but you can play around with seasoning combos you like...they also cook much faster than traditional hash browns...I used 1 tsp EVOO and 1 tsp unsalted butter to cook it in only because I don't have nonstick pans or I would have just used cooking spray.
