thanks for stopping by the blog - spelt spaghetti (and i LOVE the angel hair kind) are surprisingly yummy AND filling - following the portion size on the package, we never get hungry afterwards, doesn't feel like carb overload - it's my preferred pasta! 216 days ago
Thanks for asking about my transition to veganism. I think I'm doing great. It's been a lot of fun searching out and trying new recipes. My family has new favorite foods now. It's a process but it's getting easier all the time. 229 days ago
thanks for stopping by the blog - we learned the... er... hard way about hunters when we were building the house, took a walk in all our innocence and pelle (the border collie) discovered a hunter lurking behind a tree (to the hunter's chagrin). we learned that you *don't* go walking across the fields this week... oh well:-) 230 days ago
Vegan cheese can be difficult. My absolute favorite of all time is the wayfare brand-- they do a cheddar and a hickory cheddar-- and both are DELICIOUS. They don't distribute to MN anymore, so I order in bulk from them and pay $45 for shipping-- they are that good, that much better than all of the other veggie cheeses I have found. I eat some almost every day-- add the hickory smoked cheddar to vegan chili, or on grilled vegan brats, and the plain cheddar is fabulous on potatoes, in pasta, or as a cheezy addition to soups. It's even awesome for grilled cheese-- take some wheat bread, add mustard on one side and wayfare on the other. Fill with orange bell peppers, spinach, tomatoes and red onions. Spread earth balance on the outside, and grill OM NOM NOM NOM.
One of my favorite go to meals is wayfare: http://www.sparkpeople.com/mypage_public_j ournal_individual.asp?blog_id=5501565
There are other cheeses-- but I hate daiya, teese is just okay, the chia cheese is GROSS, nacho mom's queso is good, but it's more bean dip than cheese.... If you have a veg friend, invest $20 each and try a few.... but for me, wayfare is the only way to go.
(for pizza, I recommend ordering pesto sauce with no cheese. It's delicious!) 231 days ago
