i see you are enjoying hummus - if you make your own, you can actually indulge much more guilt free by limiting (or omitting) the oil. it's really easy and delicious. i also make a terrific chickpea soup - saute a bunch of garlic cloves chopped in a little bit of oil, add two cans of beans (i make my own, about 3 cups), and enough water to cover. simmer 5 minutes, then blend with an immersion (stick) blender or in an upright blender. add the juice of one lemon (or two, go crazy!), and add more water if the consistency is too thick. my son calls this "hummus in a soup bowl"); sometimes i spoon it on to a baked potato. and DH loves this soup! 233 days ago
